Perfect Autumn salad #recipe Carrots & Cauliflower by @DarylWoodGerber

Carrot Cauliflower Salad
Perfect for Autumn

A couple of months ago, my pal Janet aka Laurie Cass, [BOOKMOBILE CAT MYSTERIES - if you haven't read them, do! Darling!! Eddie the special]

Anyway, Janet aka Laurie shared a broccoli salad that, I swear, my husband could not resist. It had bacon and onions and well, even good stuff for you, too.

So I had a head of cauliflower in the house and I thought, hmmm, I wonder if broccoli can be switched out for cauliflower. It can! I added some carrots to add color. Divine. This is now my husband's newest favorite salad.

Janet/Laurie, sorry. But isn't it perfect for the autumn holidays? And so easy!

1 large bunch of cauliflower, cut into small, bite-sized pieces
2 carrots, peeled and minced
1/2 cup regular or golden raisins
1/2 lb. crumbled bacon (about 5-6 pieces)
1/2 yellow onion, chopped fine
1/4 cup sunflower seeds or pine nuts

Dressing - add just before serving
1/3 cup regular or light mayonnaise
1/3 cup sugar
2 tablespoons vinegar

Mix cauliflower, carrots, raisins, bacon, onion, and sunflower seeds (or pine nuts). Just before serving, add the dressing about 1/4 cup at a time, until you reach the desired amount of moistness. Don’t overdo it!

Bacon cooking tip:  I like to make it in a microwave. Set a piece of paper towel on a large plate. Lay out the bacon in individual strips. Cover with another piece of paper towel. Cook on high 4-5 minutes, until very crispy. Let cool.

I served this salad with lamb chops and a Parmesan crisp, which also happen to be some of my husband's foods. A perfect match.

  2. That is a wonderfully tempting looking dinner.

By the way, yesterday and today I have not been able to use the "share" link. any idea what is wrong?

    1. Oh, yay, thanks Libby.

Hm, not sure why you couldn't share the link. Were you pressing some button to do so? I'll have to ask Krista or Cleo. They're the mavens in that department. :)

    2. Libby, I just tried it and it worked fine. What does it do when you click on it?

    3. Today (Thursday) it is working fine. I think some gremlins were at work.

  3. Daryl, I think this just goes to prove that bacon can improve almost anything! LOL! It does sound good, though.
