BLUEBERRY ALMOND MUG CAKE
(GLUTEN-FREE)

tablespoons super fine almond flour
1
tablespoon coconut flour
½
teaspoon baking powder
1
1/2 tablespoons maple syrup
1
large egg
1
tablespoon milk
1
tablespoon olive oil
24
fresh blueberries
1
tablespoon sliced almonds
powdered
sugar for dusting
In microwave-safe mug, add
all ingredients, except blueberries, sliced almonds, and powdered sugar. With
small whisk or fork, mix batter until smooth.
Gently drop blueberries on
top. Don’t worry about mixing them into the batter. The berries will sink while
cooking.
Sprinkle sliced almonds over
surface of batter.
Cook cake in microwave at
full power about 1 minute and 30 seconds, or until cake is done.
