More fun with my air fryer! I am always looking for ways to jazz up veggies so hubby will eat them. This fit the bill when it came to zucchini. It's not so much a recipe as it is directions--you can make enough for two, four or more--just use more ingredients! This worked for the two of us.
1 or 2 medium zucchini
panko
Italian seasoning
Adobo seasoning (optional)
Parmesan cheese (approximately 1/4 cup)
1 egg
Slice zucchini into "batons" or strips.
Put panko in one dish and season with Italian and adobo seasoning or seasoning of your choice and Parmesan cheese. Add salt and pepper to taste.
Dredge zucchini in egg and then in seasoned panko. Add to air fryer basket and spray lightly with olive oil spray.
Bake at 400 degrees for approximately 8 to 10 minutes. Time will depend on the thickness of your zucchini strips.
Serve with lemon quarters if desired.
