Mojito Cookies #recipe @LucyBurdette


LUCY BURDETTE: I'm so excited for you to read A DEADLY FEAST--#9 in the Key West food critic mystery series coming next week from Crooked Lane Books. 

Once I had mojito cookies on my mind as a possible recipe in this book, I had no choice but to make them. They are a lovely pale green and so would be excellent for a spring dessert, as well as part of a Christmas cookie platter. You can make the icing or not, as you prefer. But I will tell you that my tasters loved the icing with its subtle rum flavoring!

INGREDIENTS

For the cookies

½ cup butter, at room temperature
½ cup white sugar
1 teaspoon vanilla
1 egg
1 tablespoon chopped fresh mint (or more to taste)
Zest of 1 lime (about 1 and ½ teaspoons)
2 cups all-purpose flour
½ teaspoon baking powder (Low sodium for me)
Pinch of salt

Rum Lime glaze

½ cup confectioner's sugar
1 teaspoon light rum
1-2 teaspoons fresh lime juice

Zest the lime, reserving the fruit for the icing. Wash, dry, and chop the mint to small pieces in a food processor. 

Cream the butter and sugar together until fluffy. Add vanilla, egg, mint and lime zest and mix well. Stir the flour, baking powder and salt together and then add this to the butter/sugar and mix on low speed only until combined. 





On a sheet of parchment paper, shape the dough into a log, cover with the parchment and refrigerate 2 hours or more.

Preheat oven to 375 degrees F. Place a second sheet of parchment on a baking sheet. Slice chilled dough into ¼-inch thick slices and transfer to prepared sheet. Bake 10-12 minutes, until bottoms and edges are light golden brown. Cool completely and then ice.

For the glaze:


Mix the ½ cup powdered sugar with 1-2 teaspoons lime juice and 1 teaspoon rum and beat until smooth. (You can adjust the amounts of lime vs rum to please your palate. And add more sugar if it seems too runny.)

Strawberry Daiquiri #recipe to Celebrate FATAL RESERVATIONS @LucyBurdette






LUCY BURDETTE:  Whoo-hoo, FATAL RESERVATIONS is definitely here! And so we are definitely celebrating this week!

I'll pause for a minute to make sure you ordered your copy...and then on to celebrating with strawberry daiquiris!




For the first time ever, we had a super-duper crop of strawberries in our garden. We ate them every which way, and shared quite a few with a cheeky chipmunk, whose MO was to take a bite out of as many as he could reach. 

Of course I made three different versions of strawberry cake, and you'll see two of them soon.  But I decided the daiquiri recipe was the most festive--and perfect for sipping while reading...

Ingredients for One Daiquiri

1-2 oz rum (we used Pusser's, but a light rum would be fine too)

1/2 oz triple sec

1/2 lime, squeezed

1/2 teaspoon sugar (you may want a little more)

1 cup or so ice cubes

1/2 cup strawberries, fresh or frozen

And here's how to make it: Put everything in the blender and whir! I had frozen some of our strawberry crop last week, so we used those. If you use fresh strawberries, you may need to adjust the ice. Garnish with a fresh berry and a mint leaf.
