Peanut Butter Chocolate Chip Granola #Recipe by @LibbyKlein #Gluten-Free #Dairy-Free

Libby Klein I have had a long love affair with Peanut Butter. It's one of my favorite foods and I'll look for ways to get it into a recipe. We've been on a granola kick in my house lately. I blame the yogurt bowls. It was only a matter of time before I thought about peanut butter granola. The addition of dark chocolate makes this more of a desserty thing than a breakfasty thing in my book. That doesn't keep me from eating it at eight o'clock in the morning though. Like Poppy said, "Oatmeal cookies for breakfast just sounds reasonable." Are you a peanut butter lover like I am? Let me know in the comments.

Gluten-Free Peanut Butter Chocolate Chip Granola

Yield: About 5 cups

Ingredients

4 cups gluten-free old-fashioned or quick cooking oats

1 tsp sea salt
¾ cup peanut butter
½ cup honey
¼ cup melted refined coconut oil
1 tsp pure vanilla extract
½ bag Enjoy Life chocolate chips or 1 cup dairy free dark chocolate, chopped

Directions:

Preheat oven to 325 degrees F.

In a small bowl, mix together oats and salt. Set aside

In a microwave safe dish, melt the peanut butter, honey and coconut oil together. Stir until smooth. Add in the vanilla.

Stir in oats and salt. Mix until well combined.

Spread mixture on a cookie sheet.

Bake in the preheated oven for 20 minutes, or until granola is lightly browned. You can stir it half way through for even baking. Take it out and let cool until you can handle it. If you don't think it's crispy enough, break apart into chunks and put back in the oven to toast it for another 5-10 minutes.

Remove from oven and let sit until cooled. Add the chocolate chips when totally cool if you want them not to melt. If you want them to melt a little, add them when the granola is still warm.

My husband had found the granola and was well on his way to polishing off the entire jar. It's very tasty!

Gluten-free baker Poppy McAllister and her aunt Ginny are looking forward to a quiet, homey Christmas at their B&B in Cape May, but unfortunately, death isn’t taking a holiday this year . . .

Ever since Thanksgiving, Poppy and her pals have been left with an unsolved mystery of the romantic kind. But at least this mystery isn’t the kind that involves murder. That all changes when the body of a fish supplier is discovered in the kitchen of her ex’s restaurant—and he’s frozen, not fresh.

For once, it’s not Poppy who tripped over the corpse, yet she can’t escape being drawn in since the victim has a note taped to him reading Get Poppy. Figures—an engagement ring isn't labeled, but the dead guy is addressed to her. Now, while Aunt Ginny plans a tree-trimming party and pressures Poppy to decode a mysterious old diary, the amateur sleuth is asked to “unofficially” go undercover at the restaurant to help the police. Until then, the only crime Poppy had been dealing with was Figaro’s repeated thefts of bird ornaments from the tree; now it looks like it’s going to be a murder-y Christmas after all.

Win for best hostess gift -- Diane Kelly's S'Mores Pie & a #bookgiveaway!

LESLIE BUDEWITZ:  I did not know, when I invited author Diane Kelly to be our guest today, that she would make me drool on the screen over this gorgeous and easy pie -- or make me wish I could ride a motorcycle, so I could drink in all that stunning Blue Ridge scenery. Since the thought of riding a motorcycle gives me the wheezies, I'll content myself with the book, A Trip With Trouble, the second book in Diane's Mountain Lodge Mysteries, out October 25.

Oh, and pie. That's a given.

Read on and join the conversation for a chance to win one of THREE fun prize packages, including the book. (BYOP.*)

*pie. But you knew that, right?

DIANE KELLY:  Hi, y’all! A Trip With Trouble is the second book in my Mountain Lodge Mysteries series, which stars Misty Murphy, a recently divorced fifty-year-old woman pursuing her dream of running a mountain lodge. In my upcoming release, the motorcycle club enjoys s’mores around the lodge’s outdoor fire pit . . . before one of them ends up dead. Eek! Don’t worry. It wasn’t the s’mores that killed her. It was–well, you’ll just have to read the book to find out. 😉

I loved s’mores years ago as a Girl Scout on campouts, and they’re just as yummy today. But you don’t have to wait for a campfire to enjoy the tastes of s’mores. With this recipe, you can enjoy the taste any day in pie form!

This S’mores Pie recipe is dairy-free, gluten-free, and vegan, so it will please even the most sensitive of palates while being better for us, animals, and the earth. Guilt-free indulgence! Hooray!

S’mores Pie by Diane Kelly

Ingredients:

One gluten-free graham-style pie crust (Hint: the Mi-Del brand is gluten-free and vegan; look for other options in your local grocery)

One large box of cook-and-serve chocolate pudding

One bag of mini marshmallows (Dandies are great and they don’t contain gelatin)

Three cups of almond milk

Optional: sliced almonds, shredded coconut

Directions:

Prepare the pudding as directed on the box, using almond milk. Pour hot pudding into the pie crust. Top with a solid layer of mini marshmallows. For a fancier pie, toast the sliced almonds and/or shredded coconut by broiling on low for one minute or until lightly browned. Sprinkle warm almonds and coconut on top of the mini marshmallows. Refrigerate for at least two hours.

Dig in and enjoy!

PRIZE GIVEAWAY! Speaking of “leaf peeping,” my favorite place to peep is in Beech Mountain, North Carolina, where my Mountain Lodge Mysteries are set. Where’s your favorite place to see fall foliage? Comment for a chance to win one of three copies of A Trip With Trouble, along with a luggage tag and an adorable plush black bear. (Leave your email address to enter. U.S. and Canadian addresses are eligible. Winner will be chosen Wed, Oct. 12.)

Good luck!

When the ladies of the Dangerous Curves Motorcycle Club take over the Mountaintop Lodge for their annual autumn ride along the Blue Ridge Parkway, Misty Murphy couldn’t be more thrilled. Every room is full and the adventurous women couldn’t be more entertaining. The ladies even invite Misty and her assistant Brynn to join them on a ride to admire the colorful fall foliage.

The skies are clear, the air is crisp, and the leaves are gorgeous. The women are having the time of their lives, stopping to enjoy the vistas along the route. But what starts as a perfect ride turns worrisome when the tail gunner – the last rider in their group – fails to show up at the Craggy Gardens overlook. Cell phone service is spotty in the remote, mountainous area, and the group is unable to connect with their friend. Might the missing woman have simply run out of gas? Could a downed tree near Mount Mitchell have forced the missing woman to take a detour or turn back? Or is something far more sinister afoot?

The ladies are determined to locate their ride or die, and Misty is equally determined to help them. But will they be able to solve the mystery when the scenic route seems intent on hiding its secrets?
