Lemon-Lavender Sandwich Cookies #giveaway #recipe Kim Davis

I'm beyond excited to share my inaugural post as a permanent member of Mystery Lovers' Kitchen today! This blog has long been one of my favorites to visit with the tempting recipes shared by the members and finding new books to add to my TBR pile. This first post also coincides the day before the audiobook release of Essentials of Murder, the first book in the Aromatherapy Apothecary Mysteries. So to celebrate, I wanted to come up with a recipe that embodies the spirit of the book by using lavender. And since it's a milestone blog post and a celebration, I decided to up the fun by turning the lemon-lavender cookies into sandwich cookies with a lemon-lavender buttercream. 


Lemon-Lavender Sandwich Cookies

Makes 8 3-inch sandwich cookies

Ingredients

For the Cookies:

2 cups all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon salt

2 teaspoons culinary lavender*

1 cup plus 1 tablespoon granulated sugar, divided

Zest of 1 lemon

1/2 cup unsalted butter, room temperature

1 large egg

1 teaspoon vanilla extract

1/4 teaspoon lavender extract

Coarse sparkling sugar, optional




For the Lavender Buttercream Filling:

1/2 cup unsalted butter, room temperature

2-1/4 cups confectioners’ sugar

1-1/2 teaspoons culinary lavender, finely ground*

1 tablespoons lemon juice

1/2 teaspoon vanilla extract

1/4 teaspoon lavender extract

Gel or paste purple food coloring (optional)




Instructions

For the Cookies:

Preheat the oven to 350 degrees (F). Line two baking sheets with parchment paper and set aside.

In a medium-size bowl, whisk together the flour, baking powder, and salt. Set aside.

Using a mortar and pestle (or a clean spice/coffee grinder) grind the 1 tablespoon sugar with the lemon zest and lavender, until the mixture resembles wet sand.




Add the lemon and lavender mixture to the bowl of a stand mixer along with the remaining sugar and the butter. Beat together until light and fluffy, about 2-3 minutes. 




Add in the egg, vanilla and lavender extracts, and mix until fully incorporated. Scrape down the sides of the bowl as necessary.




Gradually add the dry ingredients to the butter mixture, mixing just until combined. Be careful not to overmix.

Cover the dough with plastic wrap and refrigerate for 30 minutes.




On a lightly floured surface, roll out the dough to about 1/8-inch thickness. Using a round cookie cutter, cut out the cookies and place them on the parchment-lined baking sheets. Reroll the scrapes no more than twice, and repeat.




Refrigerate the cut-out cookies for ten minutes.

If using, sprinkle the coarse sparkling sugar over the tops of the cutout cookies. 




Bake for 9 to 11 minutes, or until the edges are just starting to turn barely golden. Rotate the baking sheet half way through baking. Remove from the oven and allow to cool for five minutes, then remove to cool completely on a wire rack.




For the Lavender Buttercream Filling:

In the bowl of a stand mixer, whip the butter until creamy.

Gradually add in the confectioners’ sugar, a little at a time, and mix until fully incorporated.




Grind the lavender into a coarse powder using a mortar and pestle or a spice grinder.

Add in the ground culinary lavender, lemon juice, vanilla and lavender extracts. If using, add gel or paste purple food coloring, a tiny bit at a time, until desired shade is reached. Mix the buttercream thoroughly between each addition of color.




If filling is too thick, add additional lemon juice 1/2 teaspoon at a time, whipped well after each addition, until desired consistency is reached.

Continue to whip the mixture until light and fluffy, about 2-3 minutes.

Transfer the buttercream to a piping bag fitted with a medium-sized star tip. Or you may use a spatula to spread the buttercream on the cookies.

Assembling the Cookies:

Once the cookies are completely cool, pipe a generous layer of lavender buttercream onto the flat side of half the cookies.




Place another unfrosted cookie on top, flat side toward the buttercream, pressing gently to create a sandwich. Repeat with remaining cookies.




Note: *Be sure to use culinary lavender or, if using from your own garden, lavender that hasn’t been treated with pesticides.

London Fog #recipe by Mia P. Manansala @MPMtheWriter

My cozy drink reign continues! This will be the last lavender-inspired drink I share for a while (I think). Back when I posted my lavender chai latte recipe, I was reminded of a similar drink that I loved. People might be familiar with London Fogs at Starbucks, but I try to support my local cafes rather than chains as much as possible. Does that mean I don't get to enjoy those drinks anymore? No, it just means I have to get creative and figure out how to make them at home.

A London Fog, which is essentially an earl grey tea latte with vanilla and sometimes lavender, is easy, delicious, and so, so comforting. Last time, I shared a way to froth steamed milk with no fancy equipment. That method is OK, but today I'll be sharing the French press method, which is so much better. Hope you give it a try!

London Fog Recipe

Ingredients:

  • 2 tsp loose leaf earl grey tea OR 2 earl grey tea bags
  • 6 oz boiling water
  • 4 - 6 oz milk
  • 1/2 - 1 tsp vanilla extract (depending on how strong you want it)
  • 1 tsp lavender simple syrup OR sweetener of choice (more to taste)

Directions:

  1. Steep the tea in the boiling water according to the time on the package (usually 4-6 minutes). Make sure it's strong, since you'll be adding milk.
  2. While the tea is steeping, steam and froth the milk (see below for my French press method).
  3. Strain the tea into a clean mug, stir in the vanilla extract and lavender syrup or sweetener, and top with the frothed milk.
  4. Enjoy!

How to froth milk with a French Press:

  1. Heat milk on stove or in microwave until hot but not boiling.
  2. Pour heated milk into a French press and cover it with lid.
  3. Pump the plunger again and again until the milk doubles in volume.
  4. Pour the frothed milk on top of your latte.
Cast of characters: French press, looseleaf earl grey tea, lavender syrup, vanilla extract, milk

Steep 2 tsp/2 tea bags of earl grey tea in 6 oz of boiling water.

Strain the tea into a mug and stir in vanilla extract and lavender simple syrup/sweetener.

While tea is steeping, heat the milk.

Pour the heated milk into a French press.

Pump the plunger until milk doubles in volume.

Pour frothed milk on top of latte and enjoy!

Lavender Chai Latte #Recipe by Mia P. Manansala @MPMtheWriter

Way back in August, I shared a recipe for lavender simple syrup, saying I was inspired to make it due to the amazing lavender chai latte at Brewpoint Craft Oak Park. I went on to share a lavender lemonade recipe, but then over a month passed and still no lavender chai latte recipe? What gives?!

In my defense, Chicago was fairly hot and sticky for most of September, and I couldn't bring myself to prepare a drink that was obviously meant for the coziness of cooler weather. And yes, I could've just made an iced version, but the combination of lavender + hot drink before bedtime just can't be beat. As such, I used a decaf chai, but this drink is delicious enough to be served all day, every day. The weather this week (though still humid) has been dull and grey and incredibly bleh. The perfect time for a pick-me-up!

Cast of characters: full fat milk, loose leaf masala chai, lavender simple syrup

Lavender Chai Latte Recipe

Ingredients:

  • 2 tsp loose leaf chai OR 2 chai tea bags
  • 6 oz boiling water
  • 2-4 oz milk*
  • 1 tsp lavender simple syrup (more to taste)
*Use a milk with a good amount of fat in it--you need the fat to help disperse the full flavor of the spices throughout the drink.

Directions:

  1. Steep the tea in the boiling water according to the time on the package (usually 4-6 minutes). Make sure it's nice and strong since you'll be adding milk.
  2. Optional: While the tea is steeping, steam and froth the milk (see below for my simple method).
  3. Strain the tea into a clean mug, stir in the lavender syrup, and top with the frothed milk.
  4. Enjoy!

How to froth milk without fancy equipment:

  1. Pour the milk into a microwavable glass jar with lid. Make sure the jar is big enough that the milk only fills it halfway.
  2. Close the jar tightly and shake the jar vigorously for about a minute. The milk should almost double in size inside the jar and be very frothy.
  3. REMOVE THE LID (very important) and microwave the milk for about a minute, until steaming hot.
  4. Carefully pour the hot, frothed milk on top of your tea.
  5. Enjoy!
Steep the chai in 6 oz of boiling water for 4-6 minutes.
If you'd like to froth your milk, put it in microwaveable jar with lid and shake vigorously for a minute.

Remove lid and microwave milk for about a minute.

Strain tea into clean mug (or remove tea bags)

Add lavender simple syrup to taste. I did about a tsp and a half.

Add milk. I heated it too early and by the time I got to this stage, quite a few of the bubbles were gone.

Even without the froth or fancy pattern, the lavender chai latte was still delicious and comforting!

Lavender Lemonade #recipe by Mia P. Manansala @MPMtheWriter

In my last post (lavender simple syrup recipe), I mentioned that I wasn’t usually a fan of floral flavors, but the lavender chai latte at Brewpoint Craft in Oak Park, IL, changed my mind. While I still plan on sharing my version of that delicious drink, the weather in the Chicagoland area has been so humid, that the thought of a hot drink is less than welcome right now. So I figured I’d share another lavender-based drink that I fell in love with at Brewpoint Craft: Blended lavender lemonade!

I love blended drinks (give me a blended margarita over a margarita on the rocks any day), and the slushie texture of this drink makes it extra fun and refreshing. I love the combination of lemon and lavender, and (blended or not) this drink would make a wonderful addition to a summertime picnic or tea party.

Blended Lavender Lemonade

Yield: one 12oz drink

Ingredients:

Juice of one small lemon (about 2-3 TBSP)

2 TBSP of lavender simple syrup (recipe here)

Ice

Filtered water

Directions:

  1. Add the lemon juice and lavender simple syrup to a blender cup. 
  2. Add about 4-6oz of water (½-⅔ cup) and 1-2 big handfuls of ice.
  3. Blend the mixture until all big pieces of ice are broken up and the texture is slushie.
  4. You can also leave the mixture unblended and just shake the drink vigorously in a lidded container until the drink is cold.
  5. Enjoy! 

I’ve got at least two more lavender drink recipes to share with you (the simple syrup lasts for at least a week, if not more, if kept covered in the fridge), so make sure to pick up some culinary grade dried lavender soon! What are your favorite lemonade recipes? Let me know in the comments!

Cast of characters (I only used one lemon)

Add juice of one small lemon, 2 TBSP lavender simple syrup, and about 6oz water to a blender cup.
Add one to two big handfuls of ice.

Blend until mixture is slushy.

Lavender Simple Syrup #recipe by Mia P. Manansala @MPMtheWriter

I’m not a big fan of floral flavors. I enjoy jasmine tea and black tea with a hint of rose. I’ve had Jeni’s wildberry lavender ice cream and it was super delicious. But in general, a lot of the floral treats I’ve had reminded me of potpourri because the floral notes were very heavy-handed, particularly the lavender-flavored treats. So I didn’t expect a lavender chai latte to become one of my absolute favorite drinks, until it was recommended to me by the owner of Brewpoint Craft Oak Park.

Melissa, the Brewpoint Craft owner, is a fellow Filipino American and she was kind enough to meet me for an interview since I’ve been doing research on what it’s like to own and run a cafe for my Tita Rosie’s Kitchen Mystery Series. Brewpoint Craft has an extensive drink menu (as well as cocktails and charcuterie!), so I asked her what she recommended. She told me people come from all over just for their lavender chai latte with oat milk. I decided to give it a shot and fell in love. Since then, I’ve been trying to recreate it at home, and I started with the lavender simple syrup, which can be the base for many fun drinks. Keep an eye on this space because I’ll be sharing many of my drink experiments here!

Lavender Simple Syrup Recipe

Yield: about one cup (8oz)

Ingredients:

1 cup white sugar

1 cup water

1 heaping TBSP culinary grade dried lavender

Directions:

  1. Add the sugar and water to a medium saucepan and bring to a boil, stirring occasionally.
  2. Once the sugar is fully dissolved, add the lavender and turn off the heat.
  3. Let the syrup steep for 30-60 minutes, depending on how strong you want the flavor.
  4. Strain into a clean jar and discard the lavender buds.
  5. Enjoy in a variety of drinks!

Cast of Characters

Add sugar and water to a saucepan.

Bring to a boil, stirring occasionally until sugar is dissolved.

Add a heaping tablespoon of dried lavender to the simple syrup.

Turn off the heat and let the lavender steep for 30-60 minutes, to your desired strength.

Strain the mixture into a clean glass jar (I used a tea strainer).

Your lavender simple syrup is now ready! Use it to sweeten anything that could benefit from a hint of floral sweetness, such as coffee, tea, lemonade, and seltzer water.
