Chicken and Noodles #recipe @vmburns #giveaway

 VMBURNS: It snowed in Georgia!!! It's winter and time to dig out my crockpot. I LOVE my crockpot. I had MOST of the ingredients, except for the most important one, the chicken. By the time my groceries were delivered, I didn't have time for the slow cooker. My mom used to make Chicken and Noodles on the stove and I loved it. Sadly, she left no written recipes, so I've had to try to figure out how to make this by myself. This version doesn't taste like my mom's but it's still tasty. 



CHICKEN AND NOODLES


 
INGREDIENTS
    • 1 lb boneless skinless chicken thighs, 
    • 2 Tablespoons olive oil
    • 2 Tablespoons butter
    • 1 1/2 Cups Carrots, sliced
    • 1 1/2 Cups celery, sliced
    • 1 onion, diced
    • 8 Cups chicken broth
    • 2 Tablespoons chicken bouillon powder or cubes
    • 1 bay leaf
    • 1Teaspoon oregano, paprika, cumin, basil, thyme, sage, creole seasoning
    • 1 /4 Teaspoon red pepper flakes (optional)
    • 1/3 Cup flour
    • 2 Cups heavy cream or half and half
    • 2 Tablespoons cornstarch
    • 1 Cup Egg noodles
    • 1/3 Cup parmesan (optional)


    • INSTRUCTIONS
      1. Heat the oil in a dutch oven. Season the chicken with salt and pepper and add to the heated oil. Sear the chicken until golden brown (approx 2 minutes per side). Remove chicken.

      2. Add the butter to the dutch oven. When the butter melts, add onions celery, and carrots. Cook for approximate 4-5 minutes and scrap the bits from the bottom of the pot.

      3. Sprinkle in the flour. Stir for approximately 2 minutes so the flour doesn't burn.
      4. Add the chicken, chicken broth, bouillon, and all of the spices. Cover and cook for 15-20 minutes. 

      5. Remove the chicken. Shred and return to soup.

      6. Whisk heavy cream with the cornstarch, and add to the pot along with the noodles and shredded chicken. Simmer until the noodles are al dente.

      7. Reduce heat to low and add the Parmesan.
      8. Serve.
