Roasted Asparagus from @TinaKashian1#Thanksgiving #Giveaway

 Hello from TINA KASHIAN! This Thanksgiving, I’m adding roasted asparagus to the menu. We will serve the traditional green bean casserole, but we are trying something new as well. My oldest daughter does not like asparagus, but I love it. So, I’ve been searching for a recipe that may entice her to try this vegetable. I roasted the asparagus with lemon, butter, then added Parmesan cheese. It worked! When I made it earlier this week, she ate two asparagus spears. I count this as a win, and I’m looking forward to serving it on Thanksgiving. See below for my upcoming release and a holiday book giveaway of "Mistletoe, Moussaka and Murder."

Now on to my Thanksgiving asparagus recipe:

Ingredients:

1 lb asparagus (about 1 bunch)

1 lemon, ½ juice and ½ sliced into rings

1 Tbsp extra virgin olive oil

1 tsp Himalayan pink salt or sea salt

½ tsp freshly ground black pepper

1 clove garlic, minced

2 Tbsp butter, sliced

½ cup shredded Parmesan cheese

Directions:

Preheat oven to 400 degrees F. Rinse the asparagus. Break off the end of each spear by holding the base and snapping it where it breaks. Place asparagus in an aluminum lined pan. This makes for easy clean up. Drizzle with olive oil. Add lemon juice, salt, pepper, and garlic. Gently mix to coat asparagus in oil and seasoning. Add the lemon slices to the top of the asparagus. Add the thinly sliced butter on top of the asparagus. 


Bake for 10 minutes or until asparagus is tender and can be pierced with a fork. Remove from oven.


Add the Parmesan cheese.


Return to the oven for 3-5 minutes, until the cheese is melted.


 Remove from oven and place in a serving platter or dish. Enjoy!
