Roasted Asparagus from @TinaKashian1#Thanksgiving #Giveaway

 Hello from TINA KASHIAN! This Thanksgiving, I’m adding roasted asparagus to the menu. We will serve the traditional green bean casserole, but we are trying something new as well. My oldest daughter does not like asparagus, but I love it. So, I’ve been searching for a recipe that may entice her to try this vegetable. I roasted the asparagus with lemon, butter, then added Parmesan cheese. It worked! When I made it earlier this week, she ate two asparagus spears. Now on to my Thanksgiving asparagus recipe:

Ingredients:

1 lb asparagus (about 1 bunch)

1 lemon, ½ juice and ½ sliced into rings

1 Tbsp extra virgin olive oil

1 tsp Himalayan pink salt or sea salt

½ tsp freshly ground black pepper

1 clove garlic, minced

2 Tbsp butter, sliced

½ cup shredded Parmesan cheese

Directions:

Preheat oven to 400 degrees F. Rinse the asparagus. Break off the end of each spear by holding the base and snapping it where it breaks. Place asparagus in an aluminum lined pan. This makes for easy clean up. Drizzle with olive oil. Add lemon juice, salt, pepper, and garlic. Gently mix to coat asparagus in oil and seasoning. Add the lemon slices to the top of the asparagus. Add the thinly sliced butter on top of the asparagus. 


Bake for 10 minutes or until asparagus is tender and can be pierced with a fork. Remove from oven.


Add the Parmesan cheese.


Return to the oven for 3-5 minutes, until the cheese is melted.


 Remove from oven and place in a serving platter or dish. Enjoy!

  3. My favorite side dish for holidays is the variation of the standard green bean casserole that my Mom made for years. I love it all year long and it can make a standard meal feel like a holiday.

    Green Bean & Shoepeg Corn Casserole
    Serves 8
    Ingredients
    1 can French style green beans, drained
    1 can white shoepeg corn, drained
    1 can celery soup, undiluted
    1 ½ cups grated Mild Cheddar
    ½ cup sour cream
    ½ cup chopped onion
    1 can water chestnuts, finely chopped
    1 roll or tube of Ritz crackers
    1 stick of butter, melted
    Spray casserole dish with non-stick spray.
    Place drained green beans in casserole dish.
    Top with drained shoepeg corn.
    In bowl mix celery soup, cheddar cheese, sour cream, onions and water chestnuts until combined. Spoon on top of veggies in casserole dish.
    Crumble crackers in bowl and drizzle with melted butter. Stir to coat crackers. Sprinkle over top of cheese mixture in casserole dish.
    Bake in a 350 degree oven uncovered for 40 minutes.
    NOTES: This goes great for a potluck dish. It’s great hot, warm, or room temperature. It never seems to make it to the refrigerator as leftovers but I’m sure it would reheat nicely too.

  6. If you don't serve the asparagus with the lemon slices, would it make sense to remove them before adding the cheese? It seems like you must lose a significant amount of cheese when you remove the slices.
    This does sound good.
    My daughter in law won't eat asparagus every since her mother told her about the possibility of the unique urine odor.

    1. Hi Libby, Yes, you can certainly remove the lemon slices before adding the cheese. Thanks for that tip. I think roasting them also helps make them smell good.

  8. First off, thank you for the recipe! I am not a fan of the traditional green bean casserole and only make it on Thanksgiving and Christmas for my husband (and only because I love him so much). I had not thought about serving asparagus, which I really like! Another side dish that is a family favorite for us is broccoli corn casserole, made with creamed corn, fresh or frozen broccoli florets, eggs, butter, a little salt and pepper, and then your choice of buttery crackers or panko. Thank you for offering the recipe and a Christmas cozy! I am a big fan of the Kabob Kitchen Mysteries and often make the recipes. In fact, I am taking veggies and hummus as a side dish to our Thanksgiving dinner this year and am using the recipe from the series starter.   17. Besides cornbread dressing & cranberry relish? I sometimes make Splendid Spinach-Artichoke Casserole,a recipe that I tweak, that was given to me one year in the early 90s by 3 people (friend Ruth, BFF Carol & late sister-in-law Caree)
    2 pkgs. frozen chopped spinach, cooked & drained
    2 pkgs. frozen artichoke hearts, cooked & drained (qtrd.)
    1 stk. (4oz.) butter, softened
    1 1/2 pkgs. (8oz. pkgs) cream cheese, softened
    2 cloves garlic, chopped
    1 (or 2) jalapenos, seeded & chopped fine
    4 green onions (tops & bottoms) chopped
    Salt & pepper to taste
    Preheat oven to 350 degrees F. Mix all ingredients together, folding in artichoke quarters last. Bake 20-30 minutes or til bubbly. lola777_22 at hotmail dot com

  20. My favorite Thanksgiving side dish is my mom's dressing. It is a recipe her parents made and then she started making. Now finally after many years of trying I have figured it out and now I make it. It just doesn't feel like Thanksgiving without it.
