AVOCADO TOAST FOR ONE (LOW SALT)

KORINA MOSS: Most readers know me as the cheese lady because of my Cheese Shop Mysteries. However, in real life, I can't eat as much cheese as I'd like to, because I have Meniere's disease and have to keep my sodium low. At the moment, I'm having a Meniere's flare-up, and the only way to battle it is to lower my salt intake significantly. So I'm sharing with you a breakfast I love that you can make low salt. The other great thing about avocado toast is that you can add different ingredients to it to suit your taste, especially if you're not salt-sensitive -- mushrooms, caramelized onions, tomatoes, smoked salmon... or cheese, of course! I belatedly decided to make this one with mushrooms. 

LOW SALT AVOCADO TOAST FOR ONE

Ingredients:

1 slice of bread of your choice (I have no sodium Ezekiel bread)

1 egg

1/2 ripe avocado

1 wedge lemon

Mrs. Dash Everything But the Salt 

1 tsp salt-free sunflower seeds

Instructions:

Cut avocado in half at the pit and mash half in a bowl. (Avocado saves better if left in its skin with the pit.)

Add the juice of a small wedge of lemon to taste.

Add Mrs. Dash to taste. 

Toast your bread.

Cook any extra ingredients. (Here I fried up mushrooms in a touch of olive oil.)

Fry or poach your egg. I like my egg a little firm but with the yolk still runny. If I wasn't so lazy, I would've poached it. I fried it with spray in the pan, but you can use unsalted butter. 

Before your egg is done, spread avocado mixture on toast. Add sunflower seeds. Add any extra ingredients. Add egg. 




It's so satisfying, very filling, and you never miss the extra salt. As made, the sodium content is about 70 mg. Enjoy and have a happy head and a happy heart!

Yummy Vegetable Gratin #recipe @LucyBurdette




 
LUCY BURDETTE: Today's recipe was tweaked from one filed by Martha Rose Shulman in the New York Times. I made her version and then revised for my second attempt, which we modestly judged delicious. The recipe is quite flexible and can absorb about any vegetables you have lying around. You'll notice that I added no salt, though of course some of the ingredients have sodium naturally occurring. We did not miss it! And I'm very, very fussy! I'll list the approximate sodium content at the end for those interested.

For this version I used the following ingredients:

Two ears corn, kernels stripped off the cob
2 to 3 cups fresh spinach
Half a green pepper diced
One small onion diced
4 to 5 okra pods, chopped
1 tablespoon fresh dill
1 tablespoon fresh basil
3 eggs
Half cup milk
2 to 3 ounces lower salt Swiss cheese
1 ounce Parmesan, grated


Preheat the oven to 350 and grease an 8 x 8" pan well.
Sauté the onions, peppers, okra, and chopped spinach until the vegetables are tender but not overcooked. Mix in corn, dill, and basil.


In a bowl, beat the eggs and milk together. Then stir in the vegetables and the grated Swiss cheese. Scrape this mixture into the prepared pan and top with Parmesan cheese.


Bake for 30 to 40 minutes until sides and top are starting to brown. Let the dish sit for 10 minutes before serving with a green vegetable and salad.

(Now for the sodium count: Eggs, 62 mg per one medium egg. Spinach, 24 mg per one cup. Low sodium Swiss cheese, 4 mg per ounce. Shredded Parmesan, 85 mg per one Tbsp. Fresh okra, 411 mg per one cup-wow! One ear of corn, 262 mg. Half cup 1% milk, 53 mg.)

Asking for Murder by Roberta Isleib #recipe #confession


LUCY BURDETTE: All this week I'm celebrating the publication of ASKING FOR MURDER, my third advice column mystery, as an ebook. These books (written as Roberta Isleib), star a clinical psychologist who also writes an advice column. The character, Rebecca Butterman, is close to my heart, as she does the kind of psychotherapy work that I used to do. She's also a very good home cook--in ASKING FOR MURDER, she makes a wonderful meal for a man she is sort-of dating, a good friend, and a murder suspect whom she wants to grill. Cooking not only helps her think, it shows people she cares about how much she loves them, and gives her something to do while grilling bad guys. So her spaghetti carbonara is what I wanted to make for you today:


 "I diced the pancetta and scraped it into the frying pan, then began to mince an onion, the first Vidalia of the season. The hot oil would bring out the sweetness—a luscious contrast to the salty Italian bacon and cheese."

Unfortunately, this summer I've suffered with several serious bouts of vertigo and nausea, and finally had the problem diagnosed as Meniere's disease. This involves too much fluid in the inner ear. 

First line of treatment? A diuretic and LOW SALT DIET. Goodbye spaghetti carbonara! Goodbye olives and bloody Marys with the glass rimmed in salt! So long soy sauce and Chinese food. The list goes on and on. In fact, once you start reading labels (which I have to), you will be astonished and appalled at how much sodium gets packed into food. And as my brother said when I told him about this development: "But I love sodium! Sodium makes food taste good."

Sigh. But the symptoms are awful, so I have no choice. I will have to be cooking differently. And I thought there might be others of you who need to reduce salt in your diet for various reasons, and might find what I learn to be useful.

I'll start with the first thing I made--I needed protein and potassium and good easy food fast. So I made this:


Strawberry Banana Smoothie

Ingredients

1 cup strawberries, fresh or frozen (I had frozen from the garden)
1 banana
1 cup plain yogurt or milk or some of each
1 tsp almond extract
2 cups of ice


Add the ingredients to the blender and blend until smooth. That's it!
