Carrot Cauliflower Salad
Perfect for Autumn
CAULIFLOWER CARROT AUTUMN SALAD
Bacon
cooking tip: I like to make it in a microwave. Set a piece of paper towel
on a large plate. Lay out the bacon in individual strips. Cover with another
piece of paper towel. Cook on high 4-5 minutes, until very crispy. Let cool.

Perfect for Autumn
A couple of months ago, my pal Janet aka Laurie Cass, [BOOKMOBILE CAT MYSTERIES - if you haven't read them, do! Darling!! Eddie the cat...so special]
Anyway, Janet aka Laurie shared a broccoli salad that, I swear, my husband could not resist. It had bacon and onions and well, even good stuff for you, too.
So I had a head of cauliflower in the house and I thought, hmmm, I wonder if broccoli can be switched out for cauliflower. It can! I added some carrots to add color. Divine. This is now my husband's newest favorite salad.
Janet/Laurie, sorry. But isn't it perfect for the autumn holidays? And so easy!
CAULIFLOWER CARROT AUTUMN SALAD
1 large bunch of cauliflower,
cut into small, bite-sized pieces
2 carrots, peeled and minced
1/2 cup regular or golden
raisins
1/2 lb. crumbled bacon (about
5-6 pieces)
1/2 yellow onion, chopped fine
1/4 cup sunflower seeds or pine
nuts
Dressing - add just before
serving
1/3 cup regular or light mayonnaise
1/3 cup sugar
2 tablespoons vinegar
Mix cauliflower, carrots,
raisins, bacon, onion, and sunflower seeds (or pine nuts). Just before serving,
add the dressing about 1/4 cup at a time, until you reach the desired amount of moistness.
Don’t overdo it!

I served this salad with lamb chops and a Parmesan crisp, which also happen to be some of my husband's foods. A perfect match.

Today (Thursday) it is working fine. I think some gremlins were at work.
