Peach Cobbler and Giveaway from Guest Author Olivia Matthews @BooksbyPatricia

Please give our guest author, Olivia Matthews, a very warm welcome to Mystery Lovers Kitchen! I greatly enjoy her Peach Coast Library Mystery series, and I was lucky enough to read an early version of her new culinary cozy series coming out next year. It's still early days, so I can't say too much about it, but believe me when I say the setting is fun, the food delicious, and the mystery nice and twisty.

Today, she'll be sharing a recipe to pair with MURDER BY PAGE ONE, the first book in the Peach Coast Library Mystery series, as well as a giveaway, so make sure to read to the end!

Thank you so much for welcoming me to the Mystery Lovers’ Kitchen. I’m thrilled to be here. A huge thank you to Mia P. Manansala for the invitation to visit with you.

Peach cobblers play a big role in Murder by Page One, the first book in my Peach Coast Library Mystery cozy mystery series, which is available now. A different dessert takes center stage in book two, Murder out of Character, which releases in September. However, the cobbler makes several special appearances.

Before writing my Peach Coast Library Mystery series, I’d never had peach cobbler. I know, shocking! And this is the first time I’ve ever made the dessert. Are you ready for an adventure?

But first, let me know your favorite reading time snack. I’m awarding a copy of Murder by Page One, the first book in my Peach Coast Library Mystery cozy mystery series, randomly to one commentor. Open to the U.S. and Canada.

Peach Cobbler

Supplies

  • Large mixing bowl
  • Smaller mixing bowl
  • 9-inch round baking pan
  • No-stick cooking spray

Ingredients

Peach Filling

  • 5 cups canned sliced peaches 
  • 1/3 cup brown sugar 
  • 1 tablespoon lemon juice 
  • 2 teaspoons cornstarch 
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger

Biscuit Topping

  • 1 cup baking mix 
  • 4 tablespoons brown sugar (Note: 3 tablespoons for topping; 1 tablespoon for sprinkling)
  • 1 ½ teaspoon ground cinnamon (Note: 1 teaspoon for topping; ½ teaspoon for sprinkling)
  • 1/2 teaspoon ground ginger
  • 6 tablespoons almond milk

Instructions

Preheat your oven to 350 degrees Fahrenheit.

Step One: Filling

  • In a large bowl, mix canned peaches and lemon juice.
  • In a smaller bowl, combine brown sugar, cornstarch, ground cinnamon and ground ginger.
  • Spread the dry mixture over the canned peaches and lemon juice that’s in the large bowl and mix thoroughly.
  • Coat your 9-inch round baking pan thoroughly with a no-stick cooking spray.
  • Pour the combined filling ingredients into the pan.

Cast of Characters

In a large bowl, mix canned peaches and lemon juice.
 In a smaller bowl, combine brown sugar, cornstarch, ground cinnamon and ground ginger. 
Spread the dry mixture over the canned peaches and lemon juice that’s in the large bowl and mix thoroughly.

 Step Two: Biscuit Topping

  • In a large bowl, combine baking mix, ground ginger, 3 tablespoons brown sugar, 1 teaspoon ground cinnamon.
  • Add almond milk to the dry topping ingredients. Mix well.
  • Drop dough by rounded tablespoons onto the filling in the pan.
  • Combine the remaining 1 tablespoon brown sugar and ½ teaspoon ground cinnamon. Sprinkle this mixture over the biscuit topping. 

Bake for 40 minutes. Serve warm with your favorite ice cream and hot beverage.

Drop dough by rounded tablespoons onto the filling in the pan. Combine the remaining 1 tablespoon brown sugar and ½ teaspoon ground cinnamon. Sprinkle this mixture over the biscuit topping. 

Bake for 40 minutes.


Serve warm with your favorite ice cream and hot beverage.
