Mr. C's Tomatoes and Rice















One of my neighbors very kindly gave me some of his beautiful tomatoes. And along with them, he told me his favorite recipe. His wife claims he would eat it every night if he could. His recipe was blissfully simple. Cook a pot of white rice, put in a stick of butter, and add chopped tomatoes. Mr. C says it's "better than ice cream!"

Now, as a person who has her own issues with ice cream (specifically not being able to resist it), I found that hard to believe. But I liked the sound of this recipe and promptly made it. It's delicious! And it's the perfect way to use fresh tomatoes when they're all coming in at the same time.

Since I didn't know any specific quantities, I looked up tomatoes and rice. It's a Southern dish, and there are loads of variations, most of them unnecessarily complicating what is a very simple and easy recipe. They add shallots, garlic, and/or onions. Some people cook it. Some people cook the tomatoes with the rice.

I used unsalted butter. You might want to salt and pepper it to your taste. I served it with shrimp and a tossed salad. A lovely summer dinner.

Frankly, I love that the tomatoes haven't been cooked! And that stick of butter? You probably slather more on your bread because this easily makes four to six servings, depending on who is eating. If you invite Mr. C. to dinner, it might not serve as many people.

Mr. C's Tomatoes and Rice

1 1/2 cups white rice
1 stick butter (8 tablespoons)
2 large tomatoes

Cook rice according to directions on the box or bag. Meanwhile, chop the tomatoes. When the rice is cooked, fluff it up with a fork and add the stick of butter. Allow to melt. Toss the rice. Add the tomatoes, juice and all. Stir and serve.

Only 3 ingredients!

Chop tomatoes.
