But it turns deadly when Mirabelle collapses--soon after eating the gluten-free treats Josie prepared specifically for her. Now, to save her favorite cousin from prison, Lucy will have to bring a crook to book in this fifth festive Lighthouse Library mystery from national bestselling author Eva Gates.

Bread Salad or Panzanella a la Vicki Delany

Can you stand another tomato recipe?  Well, ‘tis the season and about all I’m eating are tomatoes.

In Italian this is called Panzanella, and is a salad made up mostly of bread and tomatoes.  There are plenty of recipes for it on the internet, but this is the one I made up myself and I  use and love.  I see that way back in 2013, Lucy gave you a completely different recipe. Quantities and additional ingredients are all adaptable.  This recipe feeds one as a meal, or two as a side dish, maybe with a simple grilled chicken breast or fish.

Vicki Delany’s Bread Salad

1 quarter French Baguette

2 or three large ripe tomatoes, sliced into bite-sized pieces

Olive oil

Dried rosemary

Salt and pepper

Fresh basil, chopped

1 slice of red onion, chopped finely

Crumbled goat cheese, (about ¼ of a small log). Can also use mozzarella or bocconcini  if you prefer

Slice baguette into 1 inch chunks.  Pour 1 tbsp olive oil over the baguette along with salt, pepper, and 1 tsp dried rosemary.  Toss to coat bread in oil. Add more oil if needed to get each piece coated.

Place bread on baking tray in single layer.  Bake at 350 for 5 minutes.  Remove from oven, flip bread pieces, and put back in oven for 4 minutes to toast the other side.  Keep an eye on the bread so it doesn’t burn.


Remove from oven.  Allow bread to cool. Toss with diced tomatoes, basil, and onion.  (I also use some chopped cucumber if I have it on hand).

(Optional: if the salad seems too dry, add a small spoon of vinaigrette salad dressing, such as the one I gave you the recipe for a few weeks ago and toss)

Penne with Ricotta and Mushrooms

I love ricotta and I’m always happy to find new ways of using it.  This quick and easy pasta dish is sure to be a big hit in your house.

Ingredients

454 g penne
1/4 cup extra-virgin olive oil
garlic cloves, sliced
1 tsp chopped rosemary
2 227-g pkg mixed mushrooms, thickly sliced
1 tsp salt
1 bunch green onions, chopped
1 1/2 cups ricotta
1/4 cup parsley, roughly chopped
1/2 cup grated parmigiana-reggiano or Parmesan cheese

Instructions

BOIL a large pot of salted water. Cook penne according to package directions.

HEAT a large frying pan over medium. Add oil, then garlic, and cook until sizzling for about one minute.  Stir in rosemary and increase heat to medium-high, then add mushrooms and salt. Cook until mushrooms are browned about 3 min. Season with fresh pepper. Add green onions and cook until wilted, for 2 minutes.

Drain pasta, reserving some of the cooking water.   

Add 1 cup pasta water to sauce and simmer about 10 min.

Stir drained pasta into the mushroom sauce and add ricotta and parsley. Add more pasta water if needed to give it the consistency you want. Cook until warmed through. Remove from heat and stir in grated cheese.

The Perfect Summertime Drink with Pimms

One of my daughters loves to try fancy cocktails. When she comes to visit she usually experiments with something different.  For her sister’s wedding, she was assigned the signature cocktail. Much research was required, and she came up with something so marvellous I used it at the wedding of Josie O’Malley and Jake Greenblatt in Something Read Something Dead, the fifth Lighthouse Library mystery (by Eva Gates).

Last month when the whole family gathered at my place, we had this delicious Pimm’s drink.
Absolutely perfect for those hot, lazy days when you’re relaxing on the deck or the front porch with friends.

PIMM'S ORIGINAL

Pile all the ingredients in a highball glass, mix and sip.

INGREDIENTS

50ml PIMM’S No.1
150ml of Lemonade
Chopped mint, orange, and strawberries as you like
Cucumber to garnish and ice
