One of the best wedding presents Mike and I received, back in 1978,
came from my sister Jenny. She gave us a recipe file with some of her family’s
favorite dishes, which soon became ours, too. Flaskpannkaka, a Swedish oven-baked
pancake, is one of our very favorites. It’s a great breakfast, but it’s also
wonderful comfort food for supper on a cold winter night. You can fry bacon or
sausage ahead of time and leave enough grease in the pan to keep the pannkaka
from sticking. Or, if you’re skipping the meat, then butter the pan or coat it with cooking spray.
Fläskpannkaka
Ingredients
4 eggs
2 cups milk
¾ cup flour
2 tablespoons sugar
Serve with lingonberries or other fruit or syrup
Directions
Fry:
½ pound of bacon in 8- or 9-inch skillet. Pour off fat leaving enough to coat skillet.
Beat together in bowl:
4 eggs
2 cups milk
¾ cup flour
2 tablespoons sugar
and pour into skillet
Bake in 350℉ 30-35 minutes
Serve with lingonberries or other fruit or syrup

My sons' father (my ex-husband) made something like this, without the bacon, and called it Oospapa!
ReplyDeleteOne Christmas when my boys were teenagers I solicited recipes from family members and close friends and gave each of my sons a recipe box. They both still use the recipes!
