Shrimp with Green Beans from @MaddieDayAuthor

MADDIE DAY here. I realize it's the day after American Thanksgiving, and maybe you have a fridge full of leftovers. But if you don't, or when you want a light, fresh, quick recipe for dinner, I bring you shrimp with green beans!




Shrimp with Green Beans

Ingredients



1/2 pound pasta

2 tablespoons olive oil

2 garlic cloves, minced

1/2 pound large shrimp-shelled, deveined and cut in half

Salt

1/2 pound green beans, cut into bite-sized pieces

2 tablespoons white wine (or stock or pasta water)

1/4 cup pasta water

2 tablespoons basil pesto

Freshly ground pepper


Directions

Cook pasta in salted water according to directions. Reserve 1/4 cup of the cooking water, then drain, toss with olive oil, and keep warm.

Heat a large skillet until very hot. Add the vegetable oil and heat until shimmering. Add the green beans and stir-fry until the beans soften slightly, about 3 minutes. 



Add the garlic and stir-fry for 10 seconds. Add the wine and the shrimp and a pinch of salt and stir-fry until the shrimp are just beginning to turn pink, about 30 seconds. 


Add 2 tablespoons of pasta water along with the pesto and a generous pinch of pepper and stir-fry until the shrimp are just past translucent and the beans are crisp-tender, about 3 minutes longer. Add more pasta water if needed. 

Serve hot over pasta with freshly grated parmesan cheese.

  3. I hope you had a wonderful and joyous Thanksgiving, Maddie! Thanks for this recipe. I don't dislike green beans, but they are also not my favorite vegetables. I usually eat them in Thai dishes like chicken, basil and green beans with peanuts. Now you have given me this pasta option with shrimp, which I love. I shall be trying your recipe in the next few days, after the Turkey haze lifts a bit ;-) Thank you so much. Luis at ole dot travel
