Chicken Sliders #Recipe Peg Cochran/Margaret Loudon

This is a great recipe if you are looking for something to feed a crowd or need a dish to take to a potluck.  Bonus--it's easy, especially if you start with a rotisserie chicken.  

 

1 package Hawaiian Sweet Rolls

1 cup low moisture mozzarella cheese (about 4 ounces), grated

4 ounces sharp cheddar cheese, grated

1 garlic clove, minced

1 lb. cooked and shredded chicken

4 medium scallions, sliced

¼ cup mayonnaise

¼ cup sour cream

1 tablespoon Dijon mustard

Salt & pepper to taste

3 tablespoons butter

Sesame seeds for garnish (optional)

 

 

 

Pre-heat oven to 350 degrees.  Spray pan with cooking spray.

 

Slice rolls in half horizontally and place bottom half in pan.

 

Place shredded chicken, scallions, mayonnaise, sour cream, Dijon mustard and salt & pepper to taste in a bowl and combine.  I used a rotisserie chicken to make things easier.




 


Place cheddar cheese and mozzarella cheese in another bowl and combine.

 

Arrange half the cheese mixture on the bottom layer of rolls.  Top with chicken mixture and spread evenly.  Top with remaining cheese.

 


 

 

Melt butter and garlic and brush half the mixture on the underside of the top half of the rolls.  

 


Place top half of rolls over the sliders.  Brush with remaining garlic/butter mixture and sprinkle with sesame seeds if desired.

 

 

Cover with aluminum foil and bake until cheese is melted (approximately 20 minutes).  Uncover and bake to turn the top of the rolls golden, approximately 5 minutes.
