My son-in-law is a marvellous cook. When I visited them recently, he made a great meatloaf based on a recipe he got out of an old Betty Crocker Cookbook. The recipe’s updated with vegetables added to the mixture and it’s great.
I tried it myself
when I got home and here’s the result.
Lovely and very easy to make.
Coleman’s Traditional Meatloaf
Ingredients:
1 ½ lbs lean
ground beef
½ red pepper,
chopped
1 carrot, peeled and grated
1 cup milk
1 tbsp. Worcestershire
sauce
¼ tsp dried sage
½ tsp salt
½ tsp mustard
¼ tsp pepper
1 clove garlic,
finely chopped
1 large egg
3 slices bread,
torn into small pieces
1 small onion,
chopped
½ cup ketchup.
Instructions:
Combine all
ingredients except ketchup and mix with your hands thoroughly.
Spread mixture
in ungreased loaf pan, or form into 9 X 5 inch loaf on an ungreased pan.
Spread ketchup
over the top
Bake uncovered
for about 1 hour 15 minutes or until beef is no longer pink in centre. Using a
meat thermometer, the temperature should be 160 degrees.
Drain excess fat
(if any)
