BLUEBERRY ALMOND MUG CAKE

(GLUTEN-FREE)

3 tablespoons super fine almond flour

1 tablespoon coconut flour

½ teaspoon baking powder

1 1/2 tablespoons maple syrup

1 large egg

1 tablespoon milk

1 tablespoon olive oil

24 fresh blueberries

1 tablespoon sliced almonds

powdered sugar for dusting




In microwave-safe mug, add all ingredients, except blueberries, sliced almonds, and powdered sugar. With small whisk or fork, mix batter until smooth.



Gently drop blueberries on top. Don’t worry about mixing them into the batter. The berries will sink while cooking.


Sprinkle sliced almonds over surface of batter.



Cook cake in microwave at full power about 1 minute and 30 seconds, or until cake is done. 

Top with powdered sugar.



Cake is best eaten warm. Makes one serving of mug cake.

About the author:

Sharon Farrow is the latest pen name of award winning author Sharon Pisacreta. Published in mystery, fantasy, and romance, Sharon currently writes The Berry Basket cozy mystery series, which debuted in 2016 with Dying For Strawberries. She is also one half of the writing team D.E. Ireland, who co-author the Agatha nominated Eliza Doolittle and Henry Higgins mysteries. Although Sharon has lived in Rhode Island, New York and New Jersey, she calls Michigan home, specifically the beautiful coastline of Lake Michigan. She is so enamored of the sand dunes, orchards, and beaches of western Michigan, she set The Berry Basket mysteries in a town very similar to the one she is lucky to live in.

  2. Blueberries are a staple in our house. When they are in season and prices are reasonable we stock up for the winter. I have 3 1gal. bags in my freezer, 2 in my youngest daughter's freezer and 4 in my #2 son's freezer.

    We use them in snacks that include Greek Yogurt, bananas and strawberries.

    I'm a huge fan of cozies that include cooking and recipes.

  14. Great recipe ! I'll have to get out this series it's new to me . I love that it's set in Michigan, lived in the state all my life .don't know what I'd do if I couldn't see water or a light house.

  17. I just made a blueberry streusal coffee cake two days ago.

    Am I right in thinking the flour like ingredients can be replaced by similar products? If I don't have coconut flour, I can use another flour or flour like ingredient?

    1. The coconut flour helps the batter expand and makes the cake fluffy, so I don't recommend using anything other than coconut flour for this particular recipe.

    1. Hope you enjoy it. And you can add as many or as few blueberries as you like. I like a lot of berries in my mug cake, so I use at least 2 doz. Some people prefer just a dozen.
