BLUEBERRY ALMOND MUG CAKE
(GLUTEN-FREE)
3
tablespoons super fine almond flour
1
tablespoon coconut flour
½
teaspoon baking powder
1
1/2 tablespoons maple syrup
1
large egg
1
tablespoon milk
1
tablespoon olive oil
24
fresh blueberries
1
tablespoon sliced almonds
powdered
sugar for dusting
In microwave-safe mug, add
all ingredients, except blueberries, sliced almonds, and powdered sugar. With
small whisk or fork, mix batter until smooth.
Gently drop blueberries on
top. Don’t worry about mixing them into the batter. The berries will sink while
cooking.
Sprinkle sliced almonds over
surface of batter.
Cook cake in microwave at
full power about 1 minute and 30 seconds, or until cake is done.
The Blueberry Blow Out festival in Oriole
Point, Michigan has begun and it’s time for Marlee Jacob, owner of The Berry
Basket, to shine. Unfortunately it’s also bringing out the worst in her fiancé
Ryan Zeller. Ryan’s rivalry with Porter Gale, owner of Blueberry Hill Farm,
spills over into a very public and very ugly fight. And after they compete in
the pie-eating contest and a raucous tug of war, their orchard blood feud takes
a deadly turn . . .
The death of the king of Blueberry Hill
is a shock but not too surprising—he was a diabetic whose last pig out meal was
deliciously fatal. But when authorities discover that someone tampered with
Porter’s insulin, a tragic accident is looking like murder—and Ryan is the key
ingredient. Now Marlee’s investigation to clear his name is taking her deep
into the Gale family secrets, and she’s being shadowed every step of the way by
a killer whose sweet revenge is just beginning . . .

ReplyDeleteYou're welcome. It is a great recipe. Quick and easy, too.
DeleteBlueberries are a staple in our house. When they are in season and prices are reasonable we stock up for the winter. I have 3 1gal. bags in my freezer, 2 in my youngest daughter's freezer and 4 in my #2 son's freezer.
ReplyDeleteWe use them in snacks that include Greek Yogurt, bananas and strawberries.
I'm a huge fan of cozies that include cooking and recipes.
I also keep frozen blueberries in my house year round. I have a favorite organic blueberry farm in the area that I always buy from.
DeleteWelcome Sharon Farrow!

DeleteI just made a blueberry streusal coffee cake two days ago.
ReplyDeleteAm I right in thinking the flour like ingredients can be replaced by similar products? If I don't have coconut flour, I can use another flour or flour like ingredient?
libbydodd at comcast dot net
The coconut flour helps the batter expand and makes the cake fluffy, so I don't recommend using anything other than coconut flour for this particular recipe.

Mug cakes keep us from over-indulging. Otherwise I'd be tempted to have more than one serving!
DeleteI haven't tried making a mug cake, but I like the blueberries in your recipe. Going to give it a try.
ReplyDeletediannekc8(at)gmail(dot)com
Hope you enjoy it. And you can add as many or as few blueberries as you like. I like a lot of berries in my mug cake, so I use at least 2 doz. Some people prefer just a dozen.
