With the cooler temperatures moving in, nothing appeals to me more than a hearty, flavorful soup. My must-haves are simple ingredients and easy steps. Far from a master chef, my skills are basic, at best. My protagonist, blogger Emily Dalle, doesn’t post a lot of recipes either. She’s too busy sharing the details of a recent police investigation. In my new mystery, Instagoner, Emily enlists the help of her followers to solve the recent murder of local talk show host, Jackie Hunter. Crowdsourcing for clues has never been so dangerous. Vegan Cauliflower Curry Soup
Ingredients:
1 head of cauliflower
3 cloves of garlic
1 onion
1 cup of vegetable broth
2 cups of water
1 small can of coconut milk
1 tablespoon of curry paste
Dash of salt & pepper
Directions:

This time of year, we often turn to hearty meals that warm you from the inside out. As example, homemade chili or a big bowl of vegetable beef stew fits that bill. Taught by my mother never to waste anything means putting dabs in the freezer of the fresh veggies through the growing season and leftover beef roast. That way you can add just a few ingredients to these "saved" items and make a big pot of vegetable beef soup that tastes just like you've picked the veggies right that day from the garden. Fresh is always better than canned!

ReplyDeleteBig fan of one pot meals, so soups are a standard part of winter meals. We also enjoy marinara which I usually make from fresh or San Marzano canned tomatoes, stews, chili, stroganoff and casseroles. Welcome to the Kitchen, Sydney and thanks for a new soup to try.
