V. M. Burns: My mom hated going to the grocery store. She would drag my sister and I with her for her weekly torture. She would let us pick one thing at the grocery store if we behaved ourselves. My ONE THING would go to buy cheap, plastic jewelry or some other toy that would fall apart in a matter of hours. My older sister was smarter than me (don't tell her I said that). She saved her ONE THING to pick the cookies or cereal. My sister didn't like chocolate so her choice meant a week of boring sugar cookies or frosted flakes. Don't get me wrong, I like sugar cookies and frosted flakes, but I also like chocolate chip cookies and Cocoa puffs. Regardless of what cookies my sister picked, my mother would always buy a package of oatmeal cookies. She would say, "Your father likes oatmeal." I like oatmeal cookies, too. In fact, I have rarely met a cookie I didn't like. But, we had a cookie drawer full of oatmeal cookies. There would be oatmeal, oatmeal raisin, oatmeal nut, oatmeal date nut raisin cookies, and any other variation on the theme. Sometimes, there would be four or five packages of unopened oatmeal cookies. I was tapped out on oatmeal. After eighteen years of oatmeal cookies, I swore I would NEVER eat oatmeal cookies again. Fast forward about twenty years. An oatmeal cookie is thrust upon me in a setting where I couldn't refuse. After one bite I realized, "This is pretty good. Why don't I eat oatmeal cookies?" My dad's birthday would have been November 2nd and I decided to remember him by baking his favorite cookie. Oh, and today (November 14th) is also my birthday.
OATMEAL COOKIES
Ingredients
- 3/4 Cup flour
- 1/2 Teaspoon ground cinnamon
- 1/2 Teaspoon salt
- 1/2 Teaspoon baking soda
- 1/2 Cup butter
- 3/4 Cup brown sugar, packed
- 1 large egg
- 1 Teaspoon pure vanilla extract
- 1 1/4 Cup quick cooking oats
Instructions
- Mix the flour, cinnamon, salt, baking soda and set aside.
- Cream the butter and brown sugar in a separate bowl. Add the egg and vanilla beat until smooth.
- Add the dry ingredients gradually and mix until smooth. Add the oats, but don't over-mix.
- Scoop the dough into balls and place on a cookie sheet lined with parchment paper. Cover with plastic wrap and chill for approximately one hour.
- Preheat the oven to 350 degrees and bake for 10-12 minutes until golden brown.
- Cookies will firm up as they cool.

There are two favorites in our house: oatmeal raisin and an original recipe I call Christmas biscotti because it has dried cranberries (red), chopped pistachios (green), and white chocolate chips. The oatmeal raisin recipe is very similar to yours, but includes nutmeg and cloves.

My late mother-in-law was a baker at a community college and made the best "flying saucer" cookies with oatmeal, coconut, and oh so much more ("more" being the chocolate chips I still add).

ReplyDeleteOne of my favorites is this one. It freezes well, gets better with time instead of drying out and ships great too.
OZARK HONEY OATMEAL COOKIES
Ingredients
½ cup shortening
1 ¼ cup of sugar
2 eggs
1/3 cup honey
1 teaspoon soda
1 teaspoon salt
1 ¾ cup flour
2 cups quick-cooking oats
1 cup flaked coconut
1 cup finely ground pecans
Directions
Heat oven to 375 (in my oven I use 350) degrees.
Mix shortening, sugar, eggs, honey, soda and salt thoroughly.
Stir in remaining ingredients. Refrigerate dough for a short while makes it easier to use a cookie scoop for me.
Either shape in rounded teaspoons or scoop of a small cookie scoop (I use level with the top of mine). Place on ungreased cookie sheet about 2 inches apart.
Flatten cookies with sugar coated flat bottom glass.
Bake 8 to 10 minutes (bit longer in 350 degree oven and I rotate pan after 7-8 minutes) or until lightly brown. Immediately remove from baking sheet.
Cookie variations: (I’ve never made these but came with the recipe.)
Honey-Raisin Cookies:
Omit coconut and stir in 1 cup raisins
Molasses-Spice Cookie:
Omit coconut and substitute 1/3 molasses for the honey, stir in 1 teaspoon cinnamon.
