VMBURNS: It's summer and hot in northern Georgia. So, a grilled chicken salad sounded like a good idea. The beauty of a salad is that you can add any ingredients that you like. I don't like tomatoes, so there are none in my ingredient lists, but you can add tomatoes, avocadoes, corn, black beans, sunflower seats, eggs, cheese, whatever.
GRILLED CHICKEN SALD WITH HONEY MUSTARD DRESSING
- INGREDIENTS
- 1 pound chicken breast, pounded thin and trimmed
- ¼ cup of honey mustard for marinade
- 4 cups romaine lettuce hearts, washed and chopped
- 5 strips bacon, cooked and chopped
- ⅓ cup corn, fresh or frozen (optional)
- ⅓ cup cucumbers, thinly sliced (optional)
- ¼ cup red onion, peeled and thinly sliced
- Salt and pepper to taste
- Marinade
- ⅓ cup Dijon mustard
- ¼ cup honey
- ¼ cup mayonnaise
- 1 tablespoon lemon juice, or white vinegar
- ¼ teaspoon cayenne pepper
- Honey Mustard Dressing
- ½ cup marinade
- 3 tablespoons extra virgin olive oil
- 3 tablespoons lemon juice, fresh
- 1 garlic clove, finely minced
- Sea salt and pepper, to taste
- INSTRUCTIONS
- Mix the ingredients for the honey mustard marinade together and place in the refrigerator to chill.
- Pound the chicken breast until thin, then place in a bowl with a 1/4 cup of the honey mustard dressing. Cover and chill while you preheat the grill.
- Add the ingredients for the honey mustard dressing. Mix or shake well to combine and set aside.
- Grill the chicken for 5 minutes per side until done. Then, place in a plate to rest.Assem
