Roasted Chicken Drumsticks @MaddieDayAuthor

MADDIE DAY here. In June I always host the monthly Quaker potluck my faith community has at various people's homes. The days are long, we have a wide driveway, and several of our members are mobility-impaired. Our house has five steps up to either entrance, so we hold the potluck on the driveway!

Last week I decided to roast a bunch of chicken drumsticks ahead of time to serve. I used a spice rub we love that we always use when we spatchcock a chicken or the Thanksgiving turkey. It's quick to put together and so yummy. 



These handheld drumsticks would be great to bring chilled to a potluck or picnic, or you can serve them hot for dinner. And I seem to be on trend, following Leslie K.'sand Valerie's recipes for chicken earlier this week!

Roasted Chicken Drumsticks

Ingredients


(I forgot to take the ingredients picture before I rubbed the drumsticks!)

1 teaspoon kosher salt

1 teaspoon garlic powder

1 teaspoon chili powder

1 teaspoon dried mustard

1 teaspoon dried oregano

1/2 teaspoon ground black pepper

16 chicken drumsticks, with skin (about six pounds - you can obviously cut the entire recipe in half, but these are great as leftovers)


Directions

Preheat oven to 425 F. Line a large rimmed baking sheet with parchment paper, foil, or a silicon baking mat.

Mix the spices in a small bowl.

Rub the spice mix onto both sides of the drumsticks, stuffing some of the mix under the skin if you'd like.

Lay drumsticks on prepared pan. Roast for nearly an hour or until done, turning every fifteen minutes. 



Remove from pan and serve hot or chill and serve cold. 

Note: Save the bones and any pan drippings and make a pot of stock - the rub pre-seasons the soup for you in the most delicious of ways.

I served my drumsticks next to an orzo, pesto, and cherry tomato dish at room temperature. Enjoy!

  3. Thank you so much, Edith for another easy and delicious-looking recipe! I will make it (sans garlic powder), and they will be delicious! Your suggestion to serve an orzo, pesto, and cherry tomato dish is great! I have some orzo wanting to be made, plus plenty of basil and cherry tomatoes in the garden. We have not been to a pot luck in ages, but usually favorites are carrot cake or cinnamon buns! Happy 4th. of July to you and your loved ones!!! JOY! Luis at ole dot travel

  4. Pasta salad is a great summer potluck dish! In winter, we'll often take a hot artichoke dip and dippers.

  7. I've often taken this recipe. We love it hot, warm or room temperature (I've been known to eat cold out of the frig).
    Green Bean & Shoepeg Corn Casserole
    Ingredients
    1 can French style green beans - drained
    1 can White shoepeg whole kernel corn - drained
    1 can Cream of celery soup
    1 ½ cup Grated cheddar cheese
    ½ cup Sour cream
    ½ cup Onion - chopped
    1 can Water chestnuts, chopped finely
    For Topping:
    1 roll Ritz crackers, crumbled
    1 stick Butter – melted
    Directions
    Place the green beans into casserole dish.
    Top with the shoepeg corn.
    Mix all other ingredients except for the toppings. Pour on top of the corn layer.
    Mix the cracker crumbs and melted butter together and the top the casserole with the mixture,
    Bake uncovered for 40 minutes in a 350 degree oven.

    Hubby loves to smoke meat so a big pan of BBQ pulled pork always goes over well too.
