One night I was looking for a recipe for a side dish. I had a can of cannellini beans and I also had some spinach I wanted to use up. Some online surfing brought me to this recipe from Family Style Food. It was quick, easy and tasty and there was the added bonus that I didn't have to go to the grocery store. I didn't make very many changes other than cutting the recipe in half since it was just for the two of us. I did use "jarlic" or chopped garlic from a jar. And rather than cut a quarter cup of the liquids in half, I used the full quarter cup. It turned out just fine. Have you ever gone searching for a recipe to use up leftovers in the fridge or whatever you have on hand?
2 TBL Olive oil
1 sliced shallot or half a small onion
2 15-ounce cans cannellini beans
2 garlic cloves, finely chopped
1 TBL fresh herbs of choice or 1 tsp. dried
Salt to taste
½ tsp crushed red pepper flakes or to taste
¼ cup chicken broth or more if needed
¼ cup heavy cream
3 cups torn leafy greens like kale or spinach
1/3 cup grated Parmesan
Heat
oil in a skillet and add onions or shallot.
Saute until soft.
Add the beans, garlic, herbs, pepper flakes and salt to taste. Stir and cook until garlic becomes fragrant.
Add broth and cream, stir, and cook for 5 minutes.
Stir in greens until they begin to wilt.
Remove from heat and sprinkle Parmesan on top.

ReplyDeleteSounds yummy and definitely something hubby would love too. I'm sure I have searched for a recipe for what was on hand, but off hand can't remember for what or when. I do often find myself looking to see what we have a planning meals or dishes around that. Since we don't live in town, I'm more apt to make due with what's on hand than have to drive into town for it. In the end, there's always something yummy on the table that we both enjoy. And that's what counts!

This sounds yummy and pretty healthy. I am often looking to empty the bottom of a bottle or jar of something in the fridge or finding something that needs to be used and figuring out a way to use it up, without a trip to the grocery.
