CLEO COYLE: Marc and I are always happy to welcome the sweater weather of fall after the sweltering heat of summer. Our little Queens, NYC, kitchen has no air conditioning, so the cooler temps of autumn make us happy for culinary reasons, too. At last, we're able to fire up the oven and cook up some of our fall favorites. These kitchen creations not only warm our hearts, they literally help warm our home via the oven's heat. Good eats with lower heating bills. That's a win-win. :)

LESLIE KARST: Here in Santa Cruz, California, early fall generally means warm days with no coastal fog. But there's a smell in the air of autumn, and the low sun casts a different light on the world, heralding the season's change. Tomatoes abound, so here's a recipe for Slow-Roasted Tomato Jam.
And the pears on my tree are also popping, which brings to mind Pears Poached in Red Wine with Cardamom. But I think one of my favorite autumn dishes has to be this one: Alfredo Style White Beans with Garlic Chips.
Ridiculously easy to prepare and supremely creamy and hearty, it makes for a marvelous autumn meal.

LESLIE BUDEWITZ: Unlike a lot of people, I hate to see summer leave, because it is so short and glorious here in Northwest Montana. But I love fall, too, and its characteristic flavors: apples, pumpkins, dates, cinnamon. Squash and onions and warming soups with fresh bread. I'm making myself hungry just thinking about it.
Oh, who am I kidding? I'm always hungry! I'd happily eat one or two of these Date Walnut Bars right this minute. A bowl of this French Onion Pasta. Maybe this Hungarian Mushroom Soup, from Between a Wok and a Dead Place.

LUCY BURDETTE: Fall is soup weather in my book, and with soup must come biscuits or muffins! This recipe for cornbread muffins based on Melissa Clark's version is probably my favorite. But if that doesn't appeal, how about sweet potato biscuits? Serve them hot with a nice square of butter and you won't feel so badly about winter coming!
MADDIE DAY: I'm with Leslie B on not wanting to see summer go bye-bye. That said, my corner of Massachusetts produces heavenly varieties of apples (and pears). A homemade apple pie is a treat and quite easy to make if you use a pre-made crust (I make my own, but it's not that hard, really).
Speaking of locally grown apples, wouldn't you want to celebrate a fall occasion with an Apple Cidertini?
It's also now cool enough to roast a chicken and to boil down the bones for stock, which means - you got it, Roast Chicken Soup. Even better was this Mexican-themed Day of the Dead Soup.
Chicken broth, tortillas, avocado, and sour cream? Spells Fall to me.

VICKI DELANY: Soup, soup, and more soup for me. I love to make bucket loads of soup when all the lovely fresh vegetables are in season. Stick them in the freezer and they last me all winter long. This tomato soup, made the red peppers, is a big family favourite.

MAYA CORRIGAN: Fall means fresh crunchy apples to me, and apple desserts are my favorites. I love it when the house is filled with the aroma of apples, butter, sugar and cinnamon coming from the oven. Since rolling pins and I have an adversarial relationship, I usually make crisps instead of pies. My easy-to-make cran-apple crisp ism perfect for the fall when both apples and cranberries are plentiful.
The most delicious apple dessert I've ever eaten is a tarte Tatin. It's neither easy nor quick to make, but it's worth the effort. This recipe makes a tarte Tatin superior to any I ate when I visited France in June. I make it with a combination of Granny Smith and Honeycrisp apples, varieties that may not be available in France.

PEG COCHRAN: For me, fall means fewer salads and the arrival of soup! I love soup of (almost) all kinds althouh I've never warmed to canned tomato soup. One favorite is split pea soup made in the slow cooker. It's wonderful to come home to the smell of dinner cooking--assuming you remember to turn on the slow cooker. Yup, yours truly did that once. I was so disappointed! We also love lentil soup and a version of Tuscan bean soup with chicken. Do you have a favorite go-to soup?

DeleteAutumn is my favorite season. When the weather is cooler, I love to make split pea soup, black bean soup, and U.S. Senate White Bean Soup. I also love to make meaty home made chili. Any leftovers are great on top of a baked potato, on nachos, or in a taco or burrito. Baked apples and baked pears are also a treat. Apple or pear cobblers are delightful autumn sweets . Home made yeast rolls and huge well-spiced cinnamon rolls fill my kitchen with lovely aromas. Autumn cooking is fabulous!

And when we were finished, we always feasted on those warm, wonderful apple cider doughnuts with great big glasses of fresh cider. Great season for all things apple!

I love finding new white bean recipes to try - thanks for 2 more! my 'fall' back is white bean mash with thyme, lemon and garlic. I used canned beans and it takes 3-4 minutes to make in a saute pan. DeleteI love to make a hearty vegetarian soup in my slow cooker. I use whatever vegetables that are floating around in the refrigerator, add some cans of Rotel tomatoes along with a dash of salsa and cover it all with some vegetable stock. If I am feeling very “fallish”, I add a can of pumpkin!

ReplyDeleteAnything baked, since we don't use the oven much over summer so as not to heat up the house and overwork the AC. Meatloaf, cookies, cake, pumpkin bars, macaroni corn bake. We have a peach trees and my neighbors have apple trees, so we usually trade fruits and do a lot of pie, crisp, cakes, applesauce, and peach jam. Holubchi if the cabbage is large enough, otherwise my mom developed a casserole recipe that is almost as good. Also the season for corn chowder soup and chili.

ReplyDeleteFall makes me thing of the harvest of sweet potatoes and using them for baking, in casseroles and making pies.
ReplyDeleteWith the weather turning cooler means more times using the oven to bake while warming up those cool mornings early in the season and later on any time of day. We love making the tried and true bread recipes as well as experimenting with new found ones. Since there's just the two of us, we often share the bounty of the oven or have learned to 1/2 recipes for smaller batches. To me nothing smells better than yeast bread baking. Unless you add cinnamon and other goodies to make cinnamon rolls for that yeasty smell with cinnamon added. Pure heaven!
Fall also means vegetable beef soup to me. My mom would cook this huge roast for Sunday dinner. We then knew that during the next week we were going to have soup with the leftover meat. Instead of tossing leftover dabs of fresh veggies in the summer, she would freeze little containers containing them. Then when making her soup she could add that fresh taste instead of using can veggies. Now I do the same things. Add a big skillet of cornbread and not only do we end up with a delicious meal, but when I make it the warm memories flow about my Mom and all she did to put fabulous meals on the table back when there weren't such things as microwaves, instant anything, mixes or air conditioning. They make the meals I make not only filling for the tummy but also for the heart.

Banana bread is a year round favorite, complete with mini chocolate chips.

Wow! you are making me salivate as I read everyone's faves for Fall. I dislike it when summer is supposedly over, but fortunately here in SoCal the "fall" falls short as far as cool weather is concerned: Today's high was in the mid 90's and last week in the low 100's. The idea of Fall brings my favorites, which are Pumpkin Spice everything! I am well stocked up with Pumpkin Pie Ice Cream, which is a seasonal ice cream that one of our local grocery stores sell at this time. I counted 8 cartons in our freezer, and they will be consumed slowly :-) We also make and enjoy a vegetable soup from my native Chile called Cazuela. It is a stew made with Kabucha squash, chicken legs and chicken stock, cumin, parsley, sweet corn, potatoes, carrots, celery, basil and oregano. We make this several times until Spring. Now that I have read your favorites, I am printing your recipes, and will try those that we have not yet tried...one thing for sure is that whatever recipe you post is guaranteed to be fabulous (even if I make it myself, and fumble many times!) ReplyDeleteI love all things pumpkin. Right now I am enjoying a easy sugar free treat. 1 tub of zero sugar cool whip, 1 pkg zero sugar vanilla pudding and 1 can of real pumpkin (not pie filling). Mix together and add pumpkin spice to taste. Delicious!
