French Toast in a Mug @TinaKashian

Hello from TINA KASHIAN! One of my favorite meals as a kid was breakfast for dinner. Who didn’t love this? My two daughters think I’m a fabulous mom when I make the most simple recipes and breakfast for dinner is one of them. As they’ve grown, I’m including them more and more in the kitchen. My youngest found this recipe on Pinterest. French toast in a mug. I was doubtful at first but was surprised to discover that not only is it easy to make, but it tastes great. Add some maple syrup and a side of eggs and you have breakfast for dinner.

 


Ingredients:

½ tablespoon butter

½ ripe banana, mashed

3 tablespoons milk

1 egg

½ teaspoon vanilla

½ teaspoon cinnamon

Pinch of salt

1 thick slice of day-old bread (white or wheat), torn into 1-inch pieces.

Optional toppings: maple syrup, powdered sugar

 


Directions:

Grease a microwave safe 12-ounce mug using butter. In a mixing bowl, add mashed banana, milk, egg, vanilla, cinnamon, and pinch of salt. Stir to combine. 



Add bread pieces to the mug to fill all the way to the top. Pour liquid mixture over the bread and mix with a spoon until all pieces are coated. Microwave on high for 60-90 seconds, or until the mixture is solid and egg is no longer runny. Let sit for 60 seconds before serving. If you’d like, top with maple syrup or powdered sugar. Enjoy!

  1. I love French toast but I'm not sure about adding bananas. I don't like bananas at all. I wonder if apple sauce can be substituted.

    1. I believe the banana adds to the consistency to make it moist. I do think you can substitute applesauce, if this helps

  2. Thank you for the fast and easy recipe that sounds so yummy. Great for when one or two want it and others not so much.

    My favorite breakfast food is either blueberry pancakes or pecan waffles. Since we aren't much of a breakfast sort, are breakfast food is usually for supper.

  3. Thanks for sharing this recipe, Tina--so easy and no pan to clean afterwards. I eat cereal with blueberries and bananas for my first breakfast. Second breakfast (mid-morning) is usually toast and yogurt, but your French toast in a cup could substitute for that. ~Maya

  5. It's amazing the tasty treats we can make in a cup in the microwave.
    I wonder why the banana is needed? Is it just for flavor or is it crucial to the alchemy?

    1. It's true! The microwave is amazing. The banana makes the recipe moist and not dry it out. I haven't tried applesauce, but may try it in the future

  7. That sounds like the bread pudding my mother used to make when I was growing up. Sounds like it would make a great light dinner with a piece of fruit. Thanks for sharing!
