Banana Walnut Bread @vmburns #recipe

VMBURNS: I am not a huge banana lover, but I decided to try a diet that included a lot of smoothies. So, I bought a lot of fruit. After an unexpectedly long trip to visit my family, I came home to some excessively ripe bananas. What can you do but make Banana Nut Bread? Please ignore the sentence about dieting and smoothies. 

BANANA WALNUT BREAD






INGREDIENTS

  • 3 Ripe Bananas
  • 1 Stick of butter, softened (plus 2 tablespoons for pan and roasting walnuts)
  • 3/4 Cup Sugar
  • 2 Large eggs, lightly beaten
  • 1 1/2 Cups Flour
  • 1 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1 Teaspoon Pure Vanilla Extract
  • 1 Cup Walnuts, chopped (optional)


  • INSTRUCTIONS

  1. Preheat oven to 350°F. Using 2 tablespoons of butter, grease, and flour a loaf pan. 
  2. Take 1 Tablespoon of butter and lightly roast the walnuts in a skillet. Stir continuously to avoid burning, approximately 2-5 minutes. They should be fragrant when they are roasted. Coarsely chop and cool to room temperature. 

  3. Cream the remaining butter and sugar in a mixing bowl.
  4. Mash the bananas with a fork and add to the butter and sugar. Add 2 eggs and mix until blended. 

  5. Mix your dry ingredients (flour, baking soda, and salt) and add to the banana batter. 

  6. Add vanilla and walnuts and mix. 

  7. Pour into the prepared loaf pan and bake for 55-60 minutes.

  2. I'm doing the same thing and have often found myself with too many bananas...I love banana bread but do not like any nuts in it. aprilbluetx at yahoo dot com

    1. I've seen the recipe without nuts, with raisins, chocolate chips, and even blueberries. Gotta love the versatility.

  4. We always end up with overripe bananas. We freeze them, and then use them for cooking, or make banana shakes, which we will make tonight for dinner. Since we have so many, I will try your recipe, but will substitute pecans for the walnuts, because I am intolerant of Walnuts, can you believe? Thank you for your recipe, which I am sure will be delicious! Luis at ole dot travel

  7. I like either, but I spread peanut butter on the bread, not butter. So either way I have nuts I guess!

  8. I like nuts. My Mom says her throat gets itchy with walnuts. I don't often have walnuts on hand, but I eat almonds regularly.
