Butter-and-Soy-Glazed Vegetables from Molly MacRae

 

A rich, light flavor for a fairly healthy, economical, and pretty dish. The ginger really sets it off. As my husband said, this is a dish you don't want to be over.

 

Butter-and-Soy Glazed Vegetables

Adapted from The Complete Plant-Based Cookbook

 


Ingredients

5 tablespoons salted butter, cut into several pieces

2 large shallots, halved and sliced

1-inch piece fresh ginger, peeled and thinly sliced

¼ cup soy sauce

Sesame seeds, toasted (optional)

Sliced scallions (optional)

1 pound of mixed vegetables (whatever interesting combination you buy at the farmers’ market, the grocery store, or anything you find in the fridge and want to use up)

Note: the goal is for all the vegetables to cook in the same amount of time. Broccoli and carrots will need to be sliced smaller than bell peppers, for instance. 

 

Directions

Toast sesame seeds in small, dry skillet until beginning to turn golden, watching closely so they don't burn.

In a 12-inch skillet over medium heat, melt the butter. Add the shallots and ginger, then cook, stirring until the shallots have softened, about 1 minute.

Add the vegetables and cook, stirring occasionally, until just beginning to soften, 3 to 5 minutes.


Add ¼ cup water and the soy sauce. Increase to high and cook, stirring, until the liquid has reduced and the vegetables are tender-crisp and lightly glazed, 2 to 3 minutes.  

Sprinkle with sesame seeds and scallions (if using) and serve.
