Spicy Shredded Chicken #recipe #giveaway @Vmburns

 Vmburns: This recipe incorporates a lot of things that I love. It's made in the crockpot, so it's easy. I had all of the seasonings in my kitchen. And, it's delicious. I modified this recipe from Carlsbadcravings.com. She called this Mexican Chicken. I didn't like the name, so I changed it. You can adjust this recipe to your personal taste. If you like it spicier, then use hot salsa or medium. I used mild. I also used mild green chilies, but you don't have to. I also added 4 tablespoons of brown sugar. I LOVE sweet and spicy, and 4 tablespoons gave me exactly the right balance. However, you can reduce the amount of brown sugar if you prefer it spicier and not as sweet. 

In the picture of the ingredients, you'll also notice a lot of things that aren't in the ingredient list. That's because I made burritos. So, ignore the sour cream, cheese, tortillas, hot sauce, and chicken bullion. I didn't get a picture of the burritos (I was too hungry to wait), but I had leftover chicken and made Nachos.  I remembered to get a picture of that. So, that's another thing that I love about this recipe is that  it's so versatile. If you have leftover chicken, you can make burritos, tacos, nachos, or a taco chicken salad. I just love options.


SPICY SHREDDED CHICKEN



INGREDIENTS
  • 2 Lbs Chicken Breast
  • 1 Tablespoon olive oil
  • 1/2 Cup salsa
  • 4 Tablespoons brown sugar
  • 4 Oz. can diced green chilies
  • 1 14.5 oz can Rotel diced tomatoes, drained
  • 1 Tablespoon chili powder
  • 1 Teaspoon Lawry's Season Salt
  • 1 Teaspoon each of ground cumin, garlic powder, and onion powder
  • 1/2 Teaspoon each smoked paprika, oregano, pepper, chipotle chili pepper
  • 1 Teaspoon liquid smoke



  • INSTRUCTIONS

    1. Rub the olive oil on the chicken breast and put in the crockpot. 
    2. Dump the other ingredients into the crockpot and cook on low for 6-7 hours until the chicken is tender.
    3. Shred the chicken with a fork and let it absorb more of the liquid (approx. 30 minutes).

    1. I'm old enough to be born of the generations where our Mom's taught us never to waste anything. Leftovers were re-invented into other dishes by adding things to make completely different - both in appearance and taste - than the original dish. Chicken and beef both are easy to do that with. Also learned to use what you love, but experimenting with new items or spices is what keeps it fun to create in the kitchen.

      The recipe sounds very much like one my mom made when I was younger other than back then there were not crock pots.

    2. Oh, yes! I adore getting creative with leftovers. Usually meat or protein is the item that takes the longest to prepare. Once the protein is cooked, it cane be used in so many different ways. I love to get creative using cooked protein in Mexican dishes - tacos, burritos, nachos, taco salads, wraps, huevos rancheros, etc.

    4. Welcome today. I will do both depending on the recipe. Most of the time I will make double the recipe and freeze the second recipe. Than I can pull it out and make it either into something else or use it as before. quilting dash lady at comcast dot net

    7. My family we definitely use leftovers to create other meals. It saves money and means that once it's done we can wash up the container it was in and wash it or throw the container out depending what shape it is in. We save money this way and that is good.

    10. I don't mind leftovers but usually eat them as is rather than make a new dish out of them. I do sometimes make extra chicken or turkey so I can take some of the leftover for pot pie.

    17. Thank you for this yummy spicy shredded chicken! Definitely my love because it's spicy.
      We always try to cook dinner for two, but most often or not, there is always some leftover. We will come out with other dinner option to use up the left over. For example, we will use Costco's rotisserie chicken leftover to make tacos, salad bowl, enchiladas etc. Murder Is A Piece Of Cake sounds deliciously delight! Congratulations!       I meal prep three or four different meals and divide into portions. I work from home, so they go in the fridge and freezer and I rotate them so I don't get bored and there is no waste. I cannot wait to read this...I LOVED the first book! jerri dot atherton at gmail dot com

    19. I like tweaking leftovers in different ways. It is fun to come up with creative ways to still enjoy leftover food. I am not usually a one and done person, probably because I was raised not to let anything go to waste by my mom.
