3 cups chilled leftover mashed potatoes
2/3
cup shredded cheddar or pepper jack cheese

tablespoon chopped parsley

egg

tablespoons all-purpose flour (or more)

cup all-purpose flour in a shallow bowl

oil, for pan-frying
Salsa,
for serving
Instructions
In
a large bowl, stir together the mashed potatoes, cheese, parsley, egg, and 3
tablespoons flour until combined. If it’s too wet, add more flour, a tablespoon
at a time. If it seems too dry, add another egg.
Using
your hands, divide the mixture into 12 portions. Roll each portion into a
compact ball then flatten it into a pancake about a 1/2-inch-thick.
Dredge each pancake in the flour and place it on wax or parchment paper, pressing the edges in to firm the pancake.
Heat 3 to 4 tablespoons of oil in a large sauté pan over medium heat. (Add enough oil to thoroughly coat the bottom of the pan.) Fry the pancakes, in batches, until they're golden brown and crispy on both sides, 3 to 4 minutes.
Add more oil to the pan as needed between batches. (Do not overcrowd the pan and do not flip the pancakes too soon or they won't develop a crisp crust.) Transfer the pancakes to a paper towel-lined plate and immediately sprinkle them with salt.
Serve
the potato pancakes topped with salsa. We had ours with chicken sausage and broccoli, but you do you! Sour cream works, plus eggs and bacon.

I grew up on potato patties as Mom called them. Although she never put cheese in them. Sounds like a wonder addition to me. After all, there's never such a thing as too much cheese. :) Mom also added a pinch of baking powder to them that makes them kind of puff up some making them on the light side and some small diced onion.

ReplyDeleteLeftover mashed poatoes? I'm my childhood home? Never happened or if there was, my sister took them to school and enjoyed them, cold, for lunch. But, this recipe, with a little adjustment for one person, should be .doable, It sounds delicious.

Every Chanukah I make latkes which are delectable and immediately enjoyed. If I am very energetic I make them from scratch. Grating the potatoes, adding seasoning, eggs and frying them. If not I will use a lovely mix that is excellent. Your potato pancakes are yummy. elliotbencan(at)hotmail(dot)com

I grew up making several types of potatoes, my favorite would be my Loaded Mashed Potato Pancakes. It's like a loaded baked potato in an easy to eat pancake form. I'm always asked for them at parties since they make a great appetizer as well as a side dish.

DeleteHi Maddie/Edith - what a great way to use up mashed potatoes. I think I'm going to try baking them to see it they hold up. I use a tiny bit of oil when I fry too. I usually just reheat my mashed potatoes and don't covert them into any recipe so this is helpful. aprilbluetx at yahoo dot com

I have made potato pancakes for years and the only addition I make is a handful of chopped chives. I have a LOT of chives in my garden.

These look delicious. My husband makes fishcakes with walleye, sour cream, mashed potatoes and chives, he also throws in some lemon pepper seasoning. Coats the outside in gluten free cracker crumbs and pan fires them. We did try them in the oven but they weren't quite as crispy on the outside as we wanted!

Not really. My ancestry is Puerto Rican and the only thing even remotely similiar that I ever rember eating was a papa rellenos which was a round potato mash ball stuffed with seasoned ground beef my mom would fry. cherierj(at)yahoo(dot)com
