Who doesn't love buffalo wings? Well, I suppose there are a few of you out there. Unfortunately, wings aren't the healthiest part of the chicken. You can use breast meat in these wraps and with the seasonings, you get all the flavor with less fat. Okay, the butter isn't exactly fat-free, but I reduced the quantity and found it worked fine. Feel free to do the same.
The recipe suggests using a rotisserie chicken to save time and work. I cooked a breast with my sous-vide and used that instead.
I couldn't find burrito-sized tortillas so I had to settle for taco-size, which was fine because one of these each was more than enough. I cut the recipe in half since there are only two of us and the recipe feeds six. Using the taco tortillas, I ended up with four well-stuffed wraps. We ate two and have two wrapped in foil in the fridge for lunch. Win-win! the original recipe is from Kitchn.
1 small or 1/2 large plain rotisserie chicken (or two large breasts for the whole recipe)
6 tablespoons unsalted butter
1/2 cup hot sauce, such as Franks Red Hot Buffalo Sauce or Cholula
1/2 teaspoon garlic powder or garlic granules
1 medium lime
3 tablespoons whole milk plain Greek yogurt or sour cream
1 tablespoon olive oil
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
5 packed cups coleslaw mix (from one 12 to 14-ounce bag)
4 ounces crumbled blue cheese
6 (9 to 10-inch) burrito-sized flour tortillas
Shred chicken and add to a bowl.
Melt butter over low heat. Remove from heat and add hot sauce and garlic powder. Whisk to combine.
Pour butter/hot sauce mixture over the chicken and toss to coat. (alternatively, add shredded chicken to pan with butter/hot sauce mixture.)
In a separate bowl combine lime juice, sour cream or yogurt, olive oil, salt and pepper. Mix well.
Add coleslaw and blue cheese to sour cream mixture. Mix well to coat.
Warm tortillas in the microwave and cover with a damp paper towel.
Working with one tortilla at a time, place a scant cup of Cole slaw mixture on the tortilla and spread, leaving a one inch border around the edges.
Place a heaping 1/2 cup of chicken mixture on tortilla and spread out.
Fold wrap like a burrito and continue with remaining tortillas.
