I don’t eat gluten free, but I have a family member who does, and she sent me this recipe. I tested it out for one of the forthcoming Tea by the Sea mysteries. In that series the main character, Lily Roberts, owns a tea room and also makes the breakfasts at her grandmother’s B&B, so she’ll need to have some good gluten free recipes on hand. It turned out well so I wanted to share it with you.
It couldn’t be easier. Makes about 8 pancakes
Gluten free pancakes
Put the following into a blender

1 Banana
·
2 eggs
·
2 tsp baking powder
·
2 cup oats
·
½ cup milk
·
1 tsp vanilla
·
Handful of chocolate chips
(optional)
Blend until combined.
Pour individual servings into the centre of
a hot frying pan or griddle. (I melted about 1 tsp of butter in the pan first).
When the surface is covered with bubbles, flip and cook the second side one to
two minutes until golden
I served the pancakes with maple syrup and
butter.
It's wonderful how creative gluten free cooking can be.
