I love a nice plump squash. One of my favourite ways to do it is simply to roast it in the oven.
This is a non-recipe, recipe. Use whatever quantities
you have on hand.
Roasted Butternut Squash
Olive Oil
One onion, chopped
2 cloves garlic, chopped
1 large butternut squash, peeled and cubed
Couple of potatoes, peeled and cubed
1 jalapeno pepper (if desired) chopped
1 or two tomatoes (if desired) diced
Herbs as desired – I like a sprinkle of dried rosemary and some basil
Salt and pepper
Dump all vegetables into a roasting
pan. Drizzle with two or three tablespoons
of olive oil and sprinkle with herbs. Stir to coat
Roast covered in 350 degree oven for about
an hour.
