Roasted Butternut Squash from Vicki Delany

I love a nice plump squash. One of my favourite ways to do it is simply to roast it in the oven.

This is a non-recipe, recipe. Use whatever quantities you have on hand.



Roasted Butternut Squash

Olive Oil

One onion, chopped

2 cloves garlic, chopped

1 large butternut squash, peeled and cubed

Couple of potatoes, peeled and cubed

1 jalapeno pepper (if desired) chopped

1 or two tomatoes (if desired) diced

Herbs as desired – I like a sprinkle of dried rosemary and some basil

Salt and pepper  

Dump all vegetables into a roasting pan.  Drizzle with two or three tablespoons of olive oil and sprinkle with herbs. Stir to coat

Roast covered in 350 degree oven for about an hour.

  1. One of our favourite ways to enjoy squash. It's a staple in our home,even our dog loves it on her food but never with onions.

    I love that cubed butternut is available at the store. Saves a lot of squash wrestling!
