Apparently this recipe was a Tik Tok sensation. I'm not tuned into Tik Tok (yet) so fortunately it was featured on several web sites as well. I was quite skeptical about it. I *hate* oatmeal (or any hot cereal for that matter.) It's a texture thing not a taste thing so I thought maybe I just might like this. And I did! And so did hubby. He said he felt guilty because it was like having cake for breakfast. It's also super easy to throw together (always a plus!) and uses up some of your overly ripe bananas. You know the ones I mean--the brown ones you keep meaning to throw out but feel guilty about. If you don't have any suitably ripe bananas, you can substitute two eggs.
The addition of nut butter is optional. i added peanut butter and didn't think it added enough to the taste to justify the additional calories. Try it and see what you think.
Ingredients
1 large ripe banana
1/4 cup maple syrup
2/3 cup of milk
1 teaspoon vanilla extract
1 cup old fashioned oats
1/2 tablespoon baking powder
1/2 tsp. baking soda
pinch of salt
1/2 teaspoon cinnamon
3 tablespoons nut butter (peanut, almond etc.) (optional)
1/2 cup optional mix-ins like berries, chips or raisins
Preheat oven to 350 degrees. Spray a pan with non-stick spray. I used an 8x8 inch square pan but you can even use a loaf pan although timing might vary a bit.
Throw everything except the mix-ins into a strong blender or your food processor. Process until there are few, if any, chunks and the mixture is creamy.
Pour into prepared pan and top with mix-ins. Bake for approximately 25 minutes but check as oven temperatures may vary.
Note: there's nothing that says you have to save it for breakfast and can't top it with whipped cream and eat it for dessert!
