Spinach Pepper Egg Bake from @MaddieDayAuthor #giveaway

MADDIE DAY here. It's still winter, and it's still cold out, despite much more light in every day.

An easy breakfast you can bake and serve to those in your bubble will warm your kitchen as well as your tummies.


I included this recipe in Candy Slain Murder, but you can prepare it any time of the year. It's vegetarian and gluten-free, too!

Spinach-Red Pepper Egg Bake

An easy crowd-feeder for breakfast or brunch, Robbie Jordan makes this as a holiday breakfast special in her country store restaurant because the green of the spinach with the red pepper bits looks so festive.

Makes approximately 24 pieces.




Ingredients

Four slices bacon, cooked to crisp and crumbled [omit for vegetarians]

1 cup grated sharp Cheddar cheese

1 1/2 cups baby spinach, finely chopped or one pound frozen chopped spinach, defrosted and well drained.

Whites of 1 bunch green onions, finely chopped

1 red bell pepper, seeded and diced

1/4 cup sun-dried tomatoes, diced

1 clove garlic, minced

1/2 teaspoon black pepper

10 large eggs

1/4 cup milk

2 tablespoons Parmesan cheese

1/2 cup shredded mozzarella cheese


Directions

Preheat oven to 375 degrees. Oil a 9”x13” baking dish.

Mix bacon, cheddar cheese, green onions, bell peppers, tomatoes, garlic, and black pepper in a bowl, then pour into casserole dish.

Whisk eggs with milk and pour over vegetables.



Top with Parmesan and mozzarella cheeses.

Bake for 25-30 minutes or until eggs are cooked through. Cut into two-inch squares and serve warm or at room temperature.

  1. The recipe for Spinach-Red Pepper Egg Bake sounds delicious! I have saved it to my Pinterest recipe file and will be trying it soon. It would be perfect the next time we have company and I will probably half the ingredients and fix it just for the two of us. I especially love casseroles when we have company because I can get up early, stir them together popping in the oven. Then I can clean up the kitchen while it bakes. By the time everyone's ready to eat the meal is done, most of the clean up is done and there's plenty of time to talk and catch up.

    Love all casseroles and can't say I have a favorite. However, there are three things a casserole must have to be considered in this household - a type of meat we all love (which is just about any kind), cheese (and then more cheese) and veggies (love when they are fresh out of the garden). That being said and if you look at any casserole recipe you are bond to see all three included. It must be flavorful and textured too. Your recipe fills all this which makes it a perfect keeper recipe.

  2. Welcome today. Thank you for sharing your recipe. I have a recipe that is very similar. I switch out veggies/meat as to what I have on hand. We like to add home made salsa on top. I do like to try different egg bakes. Because it is just my husband and I now at home, I will make two and freeze one and half in single servings. Just take it out and warm it up and we are good. quilting dash lady at comcast dot net

  3. Your casserole looks so good! There are so many yummy recipes to try from Candy Slain Murder, I will definitely be giving this one a try for Easter morning! Currently my go-to base for a breakfast casserole is the Cheddar Egg Scramble found in my old Southern Living Cookbook. I usual toss in whatever else I have in the fridge to change it up.   7. Recipe looks so good! I love breakfast casseroles. So many to choose from. My favorite world be french toast casserole with strawberries and blueberries. Whipped cream on top with pecan chips. Yum!

  8. Looks so good! My favorite breakfast casserole is any variation of your recipe. I use up whatever vegetables and meat I have on hand, and sometimes put hash browns or country potatoes alongside. It always works just fine for dinner! Thanks for the giveaway.

  12. This Spinach Pepper Egg Bake sounds delicious. There's a breakfast casserole style version of Egg McMuffins that is also good. It has cubed English Muffins, cubed Canadian Bacon, an egg and milk mixture with shredded cheese, all topped with butter and baked. It is very yummy.

  13. I do mine similar to yours, with whatever I have on hand, and it always includes meat, cheeses & lots of veggies. Sometimes with jalapenos, but more often I put out salsas and hot sauces for everyone to choose their own level of heat. lola777_22 at hotmail dot com
