As a native southern Californian, the taste of corn tortillas and hominy, aka posole, topped with ripe avocado slices, is the flavor of my home state and the Southwest in general. And as a long-time resident of the opposite coast in northeastern Massachusetts, I often crave those tastes.
This soup is quite easy and brings a warm comfort meal in a chilly winter. My protagonist in the Cece Barton Mysteries doesn't eat chicken, so she might make a fish-based or purely vegetarian version.
Chicken Tortilla Soup
Ingredients
2 tablespoons olive oil
1 onion, minced
1 green pepper, diced
1 yellow, gold, or red pepper, diced
2 cloves garlic, minced
1 chicken breast or 2 thighs, cut into bite-sized pieces
1 quart chicken stock
1 can hominy/posole, drained
1 teaspoon chili powder
1 teaspoon cumin
1 whole habanero or jalapeno pepper
10 corn tortillas, cut into slivers (flour tortillas won't work in this dish)
1 avocado, peeled and sliced
Sour cream
Directions
Saute the onion in oil until tender. Add peppers and saute until wilted.
Add chicken and saute for a few minutes. Add garlic and saute one minute. Add stock, hominy, and spices. Enclose pepper in a tea ball and float in the soup. Bring to a boil, then lower heat, cover, and simmer about an hour.
Add tortilla slivers and heat a few more minutes.
Serve hot with a dollop of sour cream and slices of avocado on each bowl. Enjoy!

DeleteI love tortilla soup and make it often! My recipe is a little different in that I use rice not hominy, and I toast the tortilla strips. Also no garlic as I'm allergic. This soup is so good when it's freezing outside! My absolute favorite Mexican food: tamales! I was fortunate to live near a great Mexican restaurant in upstate NY for many years. They made homemade tamales with varied fillings that were all delicious! Yams with black beans, cactus and peppers plus so many other varieties! During Covid I would order from them by the dozen - they actually freeze wonderfully! And it helped them stay afloat during that awful period in our lives.

DeleteI honestly haven't had much for Mexican food, none till I was an adult. It wasn't as popular when I was a kid and wasn't something my parents liked. I think it was an enchilada I liked but haven't tried enough things yet to pick a favorite.

DeleteWe love chicken tortilla soup but I've always made it with crushed corn tortilla chips, with extras on top for added crunch. I'll have to try it with corn tortillas when I have extras just sitting in the fridge.

ReplyDeleteA few decades ago when beloved husband finishing college I was waitressing at A country place that also did an Amazing Chimichanga. I adore Avocado & husband taken over our kitchen & makes me a sort of veggie taco tomatoes, every pepper we either grow or he buys😉 same with lettuce, olives - Tho he'll ol cook up my Grans tomato sauce for me with sherry & whatever he has open to toss in 😂😅 for the family Chicken - sooo great the next day you'll want to stick your face in it💋

DeleteI am so glad you are in California today enjoying good weather (despite the fog), dear Edith! This soup is a favorite here (sans the onions & garlic), and your recipe is a great reminder to make it again! If your travels permit, in the near future, there is a small village known for great lobster and tortilla soup in Baja California about 1 hour south of the border called Puerto Nuevo. It is a quirky 2-3 street location full of restaurants, and all the ones we have tried have been great. We have not yet switched from chicken to lobster, but we know they are both wonderful. The avocado component makes this soup extra special...I know I am biased because we grow avocados :-). Thank you for sharing this delicious recipe and continue to enjoy California. JOY!!!
