#Texas White Queso + #GIVEAWAY by Wendy Lyn Watson

I am having a great time working on my latest project, a series coauthored with my friend Melissa Bourbon.  Death at Cape Misery (the second book in the series, and the first authored by me) releases on December 1.

 Cape Misery is a fictional locale on the Oregon coast, and my main character, Cora Lane, is from the coastal town of Laurel Point, OR.  However, I can’t resist throwing in some Texas color, honoring my adopted state.  Cora’s best friend, Birdie McCoy, is a long tall Texan who has hair teased to Jesus, a “vibrant” vocabulary, and a love for all things Tex Mex.  Between her and Cora, she’s the cook, and she spices up the Pacific Northwest evenings with her chilis and salsas.

 One of Birdie’s favorite recipes is one of my own favorites:  an incredibly simple white queso (think cheese dip) that packs a modest kick of heat and a subtle tang from tomatillos.  The recipe is perfect for a party, a game day gathering, or an evening watching awards shows.  It makes enough for ten people or so (who are hungry), but the recipe is easily doubled in the crock pot.  Use it for a dip for corn chips, ladle it over nachos, or add it to the insides of your favorite burrito.

 White Queso

 1 pound white American cheese (which you can usually get at the deli counter)

8 oz. Monterrey jack cheese

8 oz. cream cheese

1 ½  cups salsa verde*

½ c. milk

 

*  I use a medium heat salsa.  The cheese tames it nicely.  If you really don’t like spice, though, go with mild.

 



Here’s where it gets easy:  cut the cheese into cubes.  Put this all in the crockpot.  Set the slow cooker to “low” and wait until the cheese melts (usually about 1.5 hours).  Stir occasionally.  And that’s it.  









It’s delicious, rich, creamy … oh gosh, I’m going to need to heat up some of the leftovers for dinner!

  2. Many a night I have enjoyed nachos for dinner and this looks like a yummy, fast topping for future nights.
    I read Murder in Devil's Cove and enjoyed it, and am looking forward to your book. Are you going to put out a novella too like Melissa did with The secret of Rum Runner's Lane?

    2. Hi Kim - so glad you enjoyed Murder in Devil's Cove. Melissa is an amazing writer, isn't she? I hope I can live up to her start with Death at Cape Misery (which is a little delayed and now coming out the end of January). The plan is for us to also put out more of the "minis" - each touching on the life of one of the other Lane women. I'll be writing first about Cora's mother, Lacy (Pippin's aunt). We've had so much fun coming up with this family tree!

    "she’s teaching American government to college kids" That is what our country needs: More people learning civics and critical thinking!!! But maybe at an earlier age, say high school or middle school?
