Chocolate Dump Cake #recipe from author @DarylWoodGerber

Are the days slipping away from you? They sure are for me! I'm sort of mind-boggled, if that's a word. I feel like there's so much on my plate and I can't quite organize it. I should be able to. I use grids and calendars and such, but then I'm off by a day or two and Monday is Thursday and Saturday is Tuesday. Oh, my!  I guess I'm a bit like Alice, turned on my head.

Cooking, luckily, brings me back to earth.  I love being in the kitchen, preparing a meal or baking something. I feel grounded and feel like everything will settle down as soon as I browse a recipe.

But today, because I am a little topsy turvy, I'll share an EASY recipe. It's a dump cake. You simply put all the ingredients into a bowl and mix. For a beleaguered brain, this is a no-brainer.  Enjoy!



1 pkg. chocolate cake mix *regular or gluten-free

1 pkg. chocolate instant pudding

4 eggs

3/4  cup safflower oil

3/4  cup milk

1/2 cup chocolate chips


Preheat oven to 325 degrees F. Grease a bundt pan using butter or spray.


Dump the cake mix, pudding mix, eggs, oil, and milki into a large bowl. Mix.  Add the chocolate chips and mix again. How easy is that?


Pour into greased bundt pan.  


Cook 45-55 minutes until a toothpick comes out clean. The top should spring back if pressed lightly with your finger.


Cool 20 minutes and then loosen the edges around the cake and turn out.


Drizzle with powdered sugar if desired.

  4. Can you use olive oil instead of Safflower?

    1. No. Olive oil in baking doesn't work well. It's too strong a flavor. You could use canola oil or coconut oil. The coconut will had a hint of coconut flavor which is YUMMY with chocolate. You'll need to warm the coconut to melt it.

  6. Can't go wrong with chocolate ANYTHING! Lol! Seriously, your cake looks yummy and sounds easy, you can't get much better than that! As for feeling a little topsy-turvy, I think most of us are feeling that way a lot more often these days. One week the days fly by and the next they drag on and more often than not I don't have a clue what the date is.
