Easy Fajitas from @MaddieDayAuthor plus #GIVEAWAY


Maddie Day here, and I'm so excited that Nacho Average Murder comes out on Tuesday! 

I'm sharing another Mexican-themed recipe today. It's not in the book, but my partner Hugh made it the other night and I thought, that's perfect for Mystery Lovers' Kitchen! He's not an elaborate cook, so you know it will be an easy dinner. And it barely heats up the kitchen, which makes it good for summer.


Chicken Fajitas

Ingredients
1 tablespoon olive oil
1 onion, minced
1 green pepper, diced
Two boneless chicken thighs or one boneless chicken breast, trimmed of fat.
Cumin
Chili pepper
Salt
4 flour tortillas
4 ounces pepper Jack cheese, grated
Salsa


Note: The ingredients picture shows frozen chicken thighs, but the cooking pictures shows chicken breast! A consequence of not snapping the ingredients pic the first time around, LOL.

Directions
Preheat gas or charcoal grill.
Sprinkle cumin, chili pepper, and salt on chicken and rub in. Turn and repeat.


Heat 1 tablespoon olive oil in a skillet. Saute onions and green peppers until tender and keep warm.


Grill the chicken on both sides until cooked. Remove and slice into thin strips.
Heat tortillas in microwave between damp paper towels until warm.
Put a tortilla on a plate. Lay on half the chicken, spoon half the vegetables on top, and sprinkle with cheese. Repeat for the other plate.
Serve with salsa - and guacamole, if desired - and another warm tortilla for each. I added lettuce to my plate, too.

  9. My husband loves tacos; so, sometimes I will pick up some shredded beef tacos at El Forastero Méxican Food on a Sunday when they have their special Taco Sunday price. Otherwise, I fix tacos at home. I, also, make taco pie and Spanish rice with sausage and/or chicken. I really like enchiladas but haven't made it in a long time due to the work involved in making it. Of course, I love snacking on chips and salsa and will sometime melt cheese on the chips. bluedawn95864 at gmail dot com

  12. We have a plethora of Mexican, Tex-Mex & Southwestern restaurants, food trucks and taquerias all over the state, so no one fave. I also cook a lot at home, and last night used the Instant Pot to make Mexican black beans with chorizo over rice, with a big salad.   14. Our favorite Mexican restaurant is called San Luis. They are a local group and have a number of restaurants in our general area. Currently, we are still ordering take out from them, as we are not yet dining in at any restaurant. I also make Mexican food at home: hard and soft tacos, various types of enchiladas, guacamole, nachos, chalupas, beef fajitas, refried and rancho style beans and Spanish rice.
