#Pumpkin Cake #Thanksgiving by @DeniseSwanson




Unlike a lot people my husband and I prefer pumpkin cake to pumpkin pie for Thanksgiving. Don't get me wrong, we love pumpkin pie, but usually  by the time we've made the rounds to various family dinners, we pied out and ready for our own Thanksgiving which ends with my mom's pumpkin cake.

When my husband and I got married nearly 40 years, (yes, I was a child bride) Mom was working as a police, fire, and emergency dispatcher for our small home town. She worked the 3-11 shift and usually went the whole night without more than one or two calls so she typed up her recipes for me. I have a whole box full of perfectly typed recipes from her and I use them often. But this pumpkin cake is one of my favorites.  

Ingredients for cake
1 (15 ounce) can canned pumpkin puree
2 cups white sugar
1 cup vegetable oil
4 eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt




In a bowl, beat pumpkin, 2 cups white sugar, and oil. Add eggs, and mix well.











In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt. 











Add these dry ingredients to the pumpkin mixture, and beat until well blended. 











Pour batter into a greased 15 x 10 inch baking pan.
Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes, or until cake tests done. Cool.










Ingredients for frosting
3 ounce cream cheese
1/4 cup Crisco (I use butter flavor)
1 stick butter
1 teaspoon vanilla extract
1 pound confectioners' sugar
1 teaspoon milk









In a mixing bowl, beat the cream cheese, butter, Crisco, and vanilla until smooth. Gradually add confectioners' sugar, and mix well. Add milk until frosting reaches desired spreading consistency. 







Frost cake.

     Even though Lexie doesn’t believe the nonsense about her being the Ravenscraft Shield, she does believe her father was murdered—a father she never knew existed, and she investigates his death.
     Too bad, whoever killed her father, now wants Lexie dead as well.

  4. The cake sounds good but I was wondering if you could substitute applesauce for some or all of the oil. I think I will try it as is anyway.
