I’m so thrilled to be back here in
the Mystery Lovers’ Kitchen and sharing one of my favorite recipes. It’s no
secret that I have a weakness for chocolate and that means I never pass up an
opportunity to add in one or two or three chocolate recipes in my Food Blogger
mysteries. In this new installment of the series, I share a recipe for Frosted
Brownies, which I love. Honestly, I’ve never met a brownie I didn’t love. It’s
moist with a bit of a crunch thanks to the chocolate chips and topped with a
heavenly chocolate frosting.
Ingredients for brownies:
¾ cup all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
½ cup unsalted butter, cut into cubes
3 ounces unsweetened chocolate, finely chopped
½ cup granulated sugar
½ cup light brown sugar
2 eggs
1 egg yolk
1 teaspoon vanilla extract
½ cup semisweet chocolate chips
Extra butter for preparing baking dish
Directions:
Brownies
Preheat oven to 350 degrees.
Butter an 8-inch square baking dish and line with parchment
paper. Be sure to let excess hang over for easy removal of brownies. Butter the
parchment paper and set aside.
In small bowl, combine flour, baking powder, and salt. Set
aside.
Place butter and unsweetened chocolate in a double boiler. Stir
occasionally until the chocolate and butter are melted and smooth.
Remove the bowl from the saucepan and whisk in the granulated and brown sugars. Next whisk in the egg, the yolk, and the vanilla extract.
Next add in the flour mixture all at once and combine with
spatula.
Fold in chocolate chips.
Pour the batter into the prepared baking dish and bake for 25 to
30 minutes, or until cake tester inserted into the center comes out with moist
crumbs attached.
Cool completely, then frost and serve! Servings will depend how
large you cut each brownie.
Ingredients for frosting:
6 tablespoons butter, softened
2⅔ cups confectioners’ sugar
½ cup baking cocoa
1 teaspoon vanilla extract
¼–⅓ cup whole milk
Frosting
In a large bowl, using either a stand or hand-held mixer, cream
together butter and confectioners’ sugar until light and fluffy.
Add in cocoa and vanilla and beat until combined.
Add in enough milk until the frosting achieves a smooth
spreading consistency.
Spread over cooled brownies.

ReplyDeleteLike you, I love all brownies. Your recipe sounds like the one my Mom used when I was a kid other than it would have been doubled I'm sure. With my family and as fast as they disappeared, it was also a sheet cake sized batch and even then it did good to last two days. This size is just right for hubby and I. I can see a hot pan of brownies in our near future!
ReplyDeleteI do love brownies with chunks of chocolate (milk or white chocolate), with pecans pieces, with extra gooeyness like caramel or cream cheese and with or without icing. I really love the little brownie pans for baking too because I've always loved the edge pieces the best and that way they are all edge pieces. Face it say brownie and I'm there!

Book looks like a great read. Love the idea of a scavenger hunt. And thank you for the brownie recipe. Love brownies, as a chocoholic, they are my favorite go to. Gotta try this recipe. But 1/2 cup of chips?? Nah. Not enough. A whole bag please. I have tried 4 different variations of brownies, my sister loves the raspberry ones. But for me. Nope. ReplyDeleteI like brownies that are more cake-y than fudge-y. I'm not big on most sweets, but I do LOVE dark chocolate. When I say dark chocolate, I mean really dark chocolate, the kind that isn't really sweet at all. So maybe brownies with some of that thrown in! Renee

Years ago when my dad's French secretary(a family friend) moved back to France she wrote & asked me to send her my brownie recipe as her family heard her rave about them. It was given to me by my late M-I-L, from Helen Corbitt's Cookbook, for Fudge Brownie Fingers. They bacame a big hit for her loved ones in Nice, so funny to me, as they are so simple!

Wow brownies sound so good we were at an American Legion steak feed last night and the lady made the duncan hines brownies and they were even good but homemade are the best,. Today since my hubby was done watching a Minn game he went out to the kitchen and made 5 dozen choc chip carmel and i said what are you doing with all of those and he said well i will be dropping them off at peoples houses I said save me some, He said not to worry as brownie week was next week wow he usually only make potatoe salad and bring it to the american legion dinners so it sounds like he is going to really be cooking.
