Appetizing #Halloween Eyeballs from Essie Lang, author


I came across this recipe in the online digest form of  Epicurius and thought it would be a fun treat for adults...I mean, Halloween isn't only for kids, right?

It's easy and tasty and kinda on the spooky side, too. As always, I tweaked it according to my own tastes and what I had or didn't have on hand. You may want to try it with the fresh crusty round bread or some sort, as they suggest, and rubbing the slices with garlic beforehand. Then lightly toasting it in the oven. I did neither but chose instead to use pre-toasted bread rounds. I also added some pimento-stuffed green olives for  a bit of variety where the "irises" are involved.

It's one of those things you can have a lot of fun with and although the "veins" were a bit picky to do, it was all well-worth it.


What you'll need:

10 crusty bread or round toast slices
1/4 c. virgin olive oil
8 small mozzarella balls
1 tbsp pesto
1 tbsp marscapone
4 pitted black olives, sliced
4 pimento green olives, sliced
sliced sweet red pepper, to size






What to do:

1.  Baste toasted rounds with extra virgin olive oil. Ad a spinkle of salt and freshly-gound black pepper..

2.  Slice mozzarella balls in half and place on toast. Press to fill out the space as best you can.

3.  Mix pesto and marscapone together in a small bowel. Add a dollop to each toast slice and spread around.

4. Slice olives and add to toast slices. These are the "irises".

5. Slice the sweet red peppers to appropriate sizes and add to toasts.





Serve and enjoy!
