It took me a while to tweak this recipe to our tastes, but once
I got it right my husband and I love it served with pumpkin cornbread. It’s a
perfect winter meal!
2 tablespoons canola oil
2 pounds beef chuck, cubed
2 cups chopped yellow onion
1 7-8 ounce can of dices chilies (undrained)
8 garlic cloves, minced
2 teaspoons dried oregano
1 small can unsalted tomato paste
1 1/2 teaspoons ground cumin
2 1/2 cups chicken stock
2 tablespoons paprika
2 tablespoons red wine vinegar
1 tablespoon light brown sugar
2 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon cinnamon
2 (15.5-oz.) can unsalted black beans, rinsed and drained
Cheddar cheese, shredded
Heat oil in a large Dutch oven over high. Add beef, and cook 8
minutes or until browned on all sides, turning occasionally. Place on a plate.
Add onion, chilies, and garlic to Dutch oven, and cook 5
minutes, stirring frequently.
Add oregano, tomato paste, and cumin, and cook,
stirring constantly, 1 minute and 30 seconds. Stir in stock, paprika, vinegar,
brown sugar, Worcestershire, salt, and cinnamon, then bring to a boil. Reduce
heat to medium. Add browned beef, cover, and simmer 45 minutes or until beef is
tender, stirring occasionally.
Stir in beans and allow to simmer for 5 minutes
Sprinkle each serving with shredded cheese.

ReplyDeleteI mentioned on facebook that in Civil War tradition, my ex's mother would make cinnamon chili at reenactments, well there is also a wonderful restaurant here that makes the most amazing chicken spaghetti with a hint of cinnamon. What a wonderful spice to add into unexpected things. Thank you for the recipe
