Puffy French Toast Lightened Up #recipe by #Denise Swanson Author

Growing up, I loved my mom's Puffy French Toast. And once I started my Healthy, Inexpensive, and Tasty (HIT) lifestyle, I set about lightening up her recipe. Today, I'm sharing both versions.



(Original Version)
1 cup sifted flour
1 and 1/2 teaspoons sugar
1 and 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1 cup milk
1 egg beaten
8 slices of bread
Crisco for frying

Sift together dry ingredients. Blend milk and egg and add to flour mixture. Beat until smooth and dip the bread into the batter turning to coat both sides. Fry in preheated fat for about 2 minutes per side.

Light Version
1 cup sifted flour
1 and 1/2 teaspoons sugar substitute
1 and 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 cup unsweetened almond milk
1/2 cup pumpkin puree
8 slices of 35 calorie oatmeal bread
Spray griddle with Pam



Sift together dry ingredients. Blend milk and pumpkin puree and add to flour mixture. Beat until smooth and dip the bread into the batter turning to coat both sides. Fry on preheated griddle for about 2 minutes per side.
