EASY SAVORY ORANGE CHICKEN from author @DarylWoodGerber



Oh gosh, oh, my. Life got away from me this week. I had family in and Labor Day and just simply forgot to write a post for the recipe that I had prepared!

Do you ever have days/weeks like that? Where everything is just moving so quickly you can't catch your breath?

Luckily there are easy recipes to make so you can, um, breathe!

My protagonist in the Cookbook Nook Mysteries likes these kinds of recipes. Jenna isn't much of a cook, but she's learning one recipe at a time. (Hint: she's a much better cook by book #5 than in book #1).  But she really likes flavor, and this recipe has it because of the herbs that go into it.

Enjoy and forgive me for being brief!



EASY SAVORY ORANGE CHICKEN

2 chicken breasts, with skin and bones
1 tablespoon canola oil (more for grilling)
1 orange
1 tablespoon Penzey’s bouquet garni (or a mixture of basil, rosemary, thyme)
salt and pepper to taste


Set the oven to 300 degrees F.

Put the chicken on foil in a flat pan. Brush with canola oil, squeeze the juice of the orange over the breasts. Sprinkle with spices and salt and pepper. Seal the foil.  Bake for 45 minutes.

Remove the chicken from the oven.

Heat your grill to medium low. Brush the grill with oil. Set the chicken on the grill, bone-side down, and bake for 10 minutes. Turn the chicken and cook another 10 minutes.

Remove from grill and, if desired, sliced the chicken off the bone. Serve with a  crisp salad.

  9. I like the idea of baking and then finishing on the grill. That way you get the crunch and flavor of grilling while keeping the meat moist.
