Dr. Pepper Chocolate Cake Recipe from author Daryl Wood Gerber

Because I'm writing A Cookbook Nook Mystery series, I'm scouring the aisles and Internet for new cookbooks. I'm also scouring the cookbooks on my shelves for inspired new ideas. I do eat fruit and veggies and grains and protein. Promise. I'm pretty darned healthy. But I love dessert.

So, as I was going through Grady Spears The Texas Cowboy Kitchen that we received from one of my husband's colleagues while working at ESPN — we get all sorts of SWAG and fun stuff, including cookbooks from golfers — I found a recipe for Dr. Pepper Cake. Dr. Pepper in a recipe? Really? Well, yes. In many of the recipes, in fact. In the stew, the additional sugar, and possibly the fizz, makes the meat incredibly tender!

And in the cake, it adds a whole lot of yum. This is easy. I have made it the normal way and gluten-free. It works both ways! But for me to taste it, well, it's got to be gluten-free. Why the candles you ask? Yes, it's my pals' launch week. But I also made this cake for my stepdaughter's birthday. She loved it.  Enjoy!


Gluten-Free Dr. Pepper Cake


Cake:

1 cup butter
1 cup Dr. Pepper
3 tablespoons cocoa powder
½ cup milk PLUS 1 tsp. vinegar
1 tsp. baking soda
1 tsp. vanilla (gluten-free)
1 egg PLUS 2 egg whites
1 cup sweet rice flour*
½ cup tapioca  starch*
½ cup potato starch  *
2 cups sugar
1 tsp. xanthan gum

* Note: You can simply use 2 cups of a packaged gluten-free flour mix like Bob's Mill instead of the combo I've devised. I like my combo. Or for you who can eat regularly, use regular flour and don't add xanthan gum!! :)

Frosting:
1 cup butter
3 tablespoons cocoa powder
6 tablespoons Dr. Pepper
1/1/2 c. powdered sugar

Preheat oven 350 degrees.

In saucepan, heat butter, Dr. Pepper and cocoa until boiling.  Remove from heat.  


In a mixing bowl, combine milk, vinegar, soda, vanilla, mix well.

In another bowl, combine eggs, rice flour, tapioca starch, potato starch, sugar, Xanthan gum.

Combine all three, pour batter into greased 13 x 9 pan.  Bake 45 min. to 1 hour.



While baking, prepare frosting , combing butter, powder and Dr. Pepper in a saucepan and bring to simmer.   Whisk in the sugar and remove.  COOL - very important -  before spreading on cake.



When the cake is done, remove from oven, pierce holes through the cake with a fork.  Drizzle the frosting all over.

YUM!

This is really good with a glass of milk.

  1. Your cake looks delicious!!! My family and I were talking about Dr. Pepper just the other day - we haven't had it in years. Don't you just love Grady Spears??? so handsome and his recipes are good too.

    Yesterday I went out and bought Krista, Sheila, and Peg's books - can't wait for yours to come out; I'll be the first one in the door at B&N.

    1. Sharon, aren't you sweet! I don't drink soda on a normal basis, but occasionally, if I want one, I go to Dr. Pepper (usually sugar-free) because I remember as a kid having it during the summer. It's that or root beer for me.

      Love Grady Spears. And love you for saying you're getting all our books! Love it. Hooray for readers.

  3. Gorgeous cake and Marc and I are both "Peppers" -- remember that great old advert with the song-and-dance man? "Be a Pepper, drink doctor Pepper." (Oh, man, I have way too many jingles rattling around in my brain--thank you, Madison Avenue.) But we do enjoy the taste of Dr. Pepper, which means, this cake is a Keeper and the cookbook looks like a lot of fun, too. Okay, Cookbook Nook author--what's the deal on cookbooks from golfers? You'll have to explain the logic on that one to me! Does hitting a ball with a stick give you better whisking technique? Maybe lots of variations on toad-in-the-hole recipes? :)

    1. Cleo, wouldn't you like to be a Pepper, too? I remember that. Definitely a good jingle!

      Re: cookbooks from golfers. I'm finding that there are groups that put out all sorts of cookbooks to raise funds for their charities. Churches, BellSouth (kid you not), and even golfers, who all donate to various PGA causes. These groups figure that their supporters will pitch in for recipes. The Golfers Cookbook "These guys are good" had some fab recipes in it. Usually the golfers favorite dishes. Even football conferences, like the SEC, put out cookbooks. It's amazing!

  5. This looks soooooo good and I want to try it tonight, but shouldn't it have baking soda or some kind of leavening in it?

    1. Ack!!! Yes, it has soda and I've added it to the recipe. It was in the "directions." My BIG oversight. Soooo sorry. Great catch!!

  7. Such a curious recipe, Daryl. I'm imagining that it's kind of like using tomato sauce in a cake, only different. It's certainly beautiful!
