🎃 October is also a great month for making pumpkin recipes. I recently shared my method for making PERFECT PUMPKIN PANCAKES with EASY BUTTER PECAN SYRUP... 



And this recipe for PUMPKIN SPICE SOUL CAKES is one of my favorites. It's my tasty twist on an old tradition...
My husband and I will devour these Pumpkin Spice Soul Cakes warm for breakfast, like pumpkin muffin tops, smeared with butter or cream cheese. Or we'll sandwich them together for dessert to make "soul cake whoopie pies" using fillings like cream cheese frosting; marshmallow creme; and even vanilla buttercream flavored with pumpkin spice.

LESLIE BUDEWITZ: Oh, I loved the Great Pumpkin, too, Cleo! Linus and his unfailing optimism is such a hopeful image for kids of all ages.  

I'm a big fan of pumpkin in just about anything, except my lattes! I love the Pumpkin Pie Spices in coffee (and so many other things). I created this recipe for Fresca in my Food Lovers' Village mysteries, and then when I created the Spice Shop mysteries, well, Pepper, the shop owner, claimed it for herself! But the pumpkin? I have better uses for it! These Pumpkin Drop Scones are easy-peasy and yummy-pummy! (I just made that up.) This Pumpkin Ginger Mousse is light and full of flavor, as if the pumpkin could float! 


Ginger and pumpkin are such a wonderful combo that we also love in this Ginger Pumpkin Apple Soup. I've apparently never shared the Cranberry Pumpkin Muffins we call Christmas Muffins but that are good all year round -- there's usually a stash in our freezer. I promise to take care of that soon!

Pumpkin Cheesecake Filled MuffinsLIBBY KLEIN: "I got a rock." My favorite line from the Great Pumpkin and a sentiment that comes up in my life from time to time but always makes me giggle. Occasional disappointment aside, I love pumpkin everything! Except maybe that pumpkin spice latte that everyone raves about. I want to like it, but it's just not my thing. These amazing coffee-house style pumpkin cheesecake muffins on the other hand, these are what my autumn dreams are made of.  You can find my gluten-free version here. I'm pretty sure the recipe is also in the back of my Halloween Mystery - Mischief Nights Are Murder. Tasty and Hilarious!

KIM DAVIS: It's been years since I've watched It's the Great Pumpkin, Charlie Brown and now I want to revisit the movie! I seem to have it on DVD somewhere in one of the closets, lol. Thanks for reminding me of a childhood classic, Cleo! 

I adore anything pumpkin and keep a dozen cans in my pantry year-round. Not only do I give some to my dog every day, but I add it to my occasional smoothie, mixing a combination of pumpkin, pear, and cinnamon as the base. During the holidays I make vegan pumpkin pies (no one can tell it's made with tofu, or at least they're too polite to say anything 😂) and make enough for breakfast the next morning if I haven't had time to make my Pumpkin Chocolate Chip Muffins.


Another fall and holiday must is my Vegan Pumpkin Spice Cake, made in a Bundt pan. Once I started making this cake, I never found the need to try any other recipe since it became a family favorite.

MADDIE DAY: My answer might be better suited for next month - that is, Thanksgiving recipes - but I really only want pumpkin in pie - or pumpkin carrot muffins.



I grew up with my mother using canned Libby's pumpkin to make two pies for the holiday. After growing and baking my own pumpkins, I have reverted to the contents of cans for my pies. And in those pies is the only place pumpkin spice belongs. I'm an adamant purist about this, with no apologies! Following my grandmother Ruth, I almost double the cinnamon, cloves, ginger, nutmeg, and allspice in the recipe on the can.


(I also bake apple and pecan pie at Thanksgiving, but only one each.)

LESLIE KARST: My favorite pumpkin that I ever carved was this one of my Jack Russell terror--I mean, terrier--Ziggy. I had a photo of her playing rough, which I transformed into a pumpkin-carving template on my computer. Came out pretty scary, no?

 


As for recipes, one of my favorites is this one for Pumpkin Soup with Brown Butter and Toasted Pumpkin Seeds. It's scrumptious!

VICKI DELANYI searched the MLK database so see if I’d ever posted a recipe with pumpkin and I came up empty. Which wasn’t a surprise as I can’t think of anything I make with pumpkin.  Even pumpkin pie isn’t my favourite. But I am very fond of squash and sweet potatoes and as it happens today, I’m making a huge batch of my Harvest Squash Soup.  It’s sort of a non-recipe, something I’ve made so many times I know to just throw in what I have in the way of vegetables straight from the farm stand – always butternut squash, sweet potatoes, and potatoes.  I make it with a good amount of curry power and other spices to produce a flavourful soup that freezes very well to enjoy over the winter months.



VMBURNS: Time for a confession. I don't like pumpkin. The only pumpkin recipe I have is for dog treats. My dogs aren't exactly food connoisseurs. Although, they have their likes and dislikes. My concern with the pumpkin dog biscuits was that IF they didn't like it, clean up would NOT be fun. Fortunately, my poodles LOVE pumpkin dog biscuits. So, when I want to spoil the poodles, that's what they get.

PEG COCHRAN/MARGARET LOUDON: I'm a late bloomer when it comes to pumpkin pie or anything pumpkin for that matter.  My parents never served pumpkin pie at Thanksgiving but I discovered it when my mother-in-law served a pumpkin chiffon pie.  Ever since, I've put pumpkin in lots of things including biscuits for my dog!  I particularly love pumpkin in muffins like these pumpkin streusel muffins.  These pumpkin snickerdoodle bars were also a hit.  I've never tried the ubiquitous pumpkin spice lattes but maybe this year!

ANG POMPANO: When I was a kid, I lived by a truck farm. Every fall, the farmer would hitch a weathered wooden wagon to his noisy old Ford tractor, and all the neighborhood kids would pile in for the ride down the dirt road to the pumpkin patch. The wagon rattled and creaked with each bump, but we looked forward to that ride every year.

When we reached the field, we’d scatter through the scratchy vines, cutting the pumpkins loose with knives we were way too young to be using. We loaded the wagon until it was stacked high, then walked along behind the tractor as it pulled the heavy load back to the farmer’s roadside stand.


There, we sorted and stacked the pumpkins, and when the work was done, the farmer fed us and handed out cold sodas. There was nothing better.

Today, I like pumpkin anything. Last year I tried making pumpkin butter, and it was easy and delicious—perfect on toast or really on anything you’d put a spread on. I plan to make it again soon and share the recipe, but for now, here’s my recipe for fried pumpkin flowers.

My brothers and I looked forward to carving pumpkins every year—scooping out the guts, lighting the candles inside just before dark—so much fun!   1. Across town, they have been celebrating the 75th anniversary of the beginning of Peanuts at the Charles Schulz Museum this weekend. I'm staying away since it is bound to be crowded.
    I have a lovely recipe for a sausage and rice stuffed pumpkin. It's great for a crowd.

  5. Love “It’s the Great Pumpkin, Charlie Brown”! Maybe it’s remembering a wonderful childhood or just being a kid at heart, but we still watch for it’s showing on TV every Halloween.
    One of my memories of Halloween was the year I wore a hotdog costume. It was the one and only bought costumes I every had. Why a hotdog? I can’t remember. Was it the last costume? Was it on sale? We will never know. I can remember being so proud and wearing it, but I can also remember being happy afterwards to going back to making my own costume (with Mom’s help).
    Right there with you Edith – almost. Pies are usually the only way I bake with pumpkin unless someone puts in a special request. I’m not against trying a bit if somewhere else and it’s being served. However, asking for the recipe isn’t something I usually do.
    My mom always made pumpkin pies for Thanksgiving and Christmas. I can remember the year she changed things up with Praline Pumpkin Pie. Ever since, it’s been my favorite pumpkin pie. This is the recipe.

    PRALINE PUMPKIN PIE
    Ingredients
    1/3 cup Pecans, finely chopped
    1/3 cup Brown sugar, packed
    3 tablespoons Butter
    3 Eggs
    ½ cup Sugar
    ½ cup Brown sugar, packed
    2 tablespoons Flour
    ¾ teaspoon Salt
    ¾ teaspoon Cinnamon
    ½ teaspoon Ginger
    ¼ teaspoon Cloves
    ¼ teaspoon Mace
    1 ½ cup Pumpkin
    1 ½ cup light cream
    1 unbaked pie crust
    Direction
    Combine butter, pecans and 1/3 cup packed brown sugar. Press into the bottom of the unbaked pie crust. Prink sides of crust. Cook in 450 degree oven for 10 minutes. Cook at least 2 minutes before filling with pumpkin filling.
    Pumpkin filling –
    Combine eggs, sugar, ½ packed brown sugar, flour, salt cinnamon, ginger cloves, mace, pumpkin and light cream. Still until smooth and blended. Pour over slightly cooled pie crust. Bake in 350 degree oven for 50 to 60 minutes testing pumpkin for knife to come out clean. Cool before cutting into slices.

    1. Pumpkin chocolate chip muffins are my favorite! While I like the idea of pumpkin cookies (and I've tried a lot of different recipes), I've found them to be too cake-like for my tastes.

  7. I've always watched Great Pumpkin every year. My mom is a big Snoopy fan so we grew up watching every time one was on. I like pumpkin desserts- pie, bars, muffins, cookies. Not a big fan of it as a savory dish. Of course anything I make with pumpkin, my cat loves getting a spoonful of plain pumpkin saved for her. Once I gave her some while we were pet sitting my sister's cats. One of her cats came running up all excited about a treat, looked at the bowl skeptically, sniffed the scoop of pumpkin, poked it with a paw and immediately shook his foot and walked off looking confused and disappointed. Apparently he wasn't impressed.

    1. I've tried cooking the pumpkin myself and it was way more effort than it was worth (in my opinion, lol). The ready availability of canned pumpkin is much more convenient and the texture is much more consistent which works better in recipes.

  11. Watching It's the Great Pumpkin Charlie Brown was always a thrill. It first aired in 1966. I have great memories of carving jack o lanterns with the kids. All those pumpkin guts! Sometimes we roasted the pumpkin seeds after a carving session.

  15. My favorite way to use pumpkin is to make the pie filling recipe (on the Libby's can), pour it into a casserole dish (no crust) and bake like you would the pie. You have pumpkin pudding - great with ice cream or whipped cream. Another favorite is to take some pumpkin, mix it with a box of vanilla pudding and add whipped cream to make a pumpkin dip.

    1. My mother roasted the seeds, too. So good! My husband had never had them, but he loved them when I roasted them for him. Now he's the one who roasts them and our son roasts seeds for his children. A tasty tradition.

  18. I am not much of a baker but I am excellent at buying delicious goodies. My local dairy farm has an excellent bakery. I picked up the first pumpkin pie of the season on Friday. The first bite of pumpkin pie is always the best! It is not Halloween until we watch The Great Pumpkin. Growing up, I don’t remember what my costumes were, I just remember that they were store bought and the masks were very awkward and very sweaty, lol! Diedraw@earthlink.net

  19. Reading this post brought back so many memories. As I was copying the recipes my daughter came in. "Mom!! Not more!!! We'd have to live for eternity if we were to try all those recipes you've collected" Telling her I did not collect the soup ones did not appease her a bit. We watch the Great Pumpkin every year. And I love collecting pumpkin recipes. When I can't find pumpkin I use sweet potatoes. Which has happened only once in the past 50 years. And I have watched "The Great Pumpkin" since it came out. And when my kids were born we watched "The Great Pumpkin" together. My sons, both in mid to late 50's insist they are too old for watching it. My daughter (52) watches it with me. Peg's pumpkin snickerdoodle bars are going to be baked first thing tomorrow. Always loved snickerdoodles, can't wait to try the pumpkin variety.   20. One of my favorite memories is carving pumpkins 🎃 with my Dad and Sister. We always had fun picking out just the right pumpkins. We always had pumpkins decorating our front porch. I'm not a big fan of pumpkin so I don't cook or bake with it.

I should change my name to Peter, so I could be known as Peter Pumpkin Eater :-) I love Pumpkin Spice Lattes, and never get enough, because I have plenty of cofee at home. To solve that i buy Pumpkin creamers and enjoy with my espressos in the morning in the Fall. In addition to pies, I will try some of your most intriguing recipes, so I am printing as many as I can and making them.   29. I absolutely adore It's the Great Pumpkin, Charlie Brown. I've watched it every year since I was 5 or 6 years old.
    I'm not a big fan of pumpkin but love anything apple, especially apple cider doughnuts. I spent more time than I care to admit looking for them last year. Halloween is so much fun, especially now that I go trick or treating with my grandchildren.

  31. I liked watching the Great Pumpkin Charlie Brown cartoon as a kid. I haven’t seen it in years. I always think I like pumpkin more than I actually do, so I buy cans of pumpkin. More often than not they are still in the cupboard for the next year. However, I do like pumpkin chocolate chip bread. I don’t have a recipe handy.   36. I love the Great Pumpkin and all the Charlie Brown world! Love happy jack-o-lanterns but hate digging out the slime guts. I haven't made one in awhile since my grandkids are teenagers and don't come trick or treating at grandma's any more. I saw so many recipes in the comments that want to try. I grew up when the only time we got Pumpkin was at Thanksgiving.

  41. At the first sign of fall, I make 2 loaves of pumpkin bread with mini chocolate chips and raisins added. I freeze one loaf until the first one is gone and I savor slices of this yummy treat for several weeks. Then I'm done with pumpkin until the next autumn rolls around.

  56. This is a great selection of stories & recipes! I love pumpkin pie and other pumpkin baked goods, would like to try a pumpkin soup. A comment on Cleo's Soul Cake recipe - when the batter gets thick and you change from whisk to wooden spoon, a Danish bread whisk would work well.

  65. We always did the normal Halloween activities until I visited it my cousin in Kentucky and went to my first Pumpkin Smash. For a donation you were allowed to pick up pumpkin and ride up in a cherry picker and try to drop your pumpkin on bulls eye. I was 11 at the time and thought this was amazing. My parents were mortified when I told them how I spent the money they gave me for my trip. It will always be one of fondest memories. cs2971@gmail.com

  66. I love pumpkin pie! Always make an easy version: NO BAKE pumpkin pie with only 5ingredients!
    Whipped topping
    Vanilla instant pudding
    Canned puréed pumpkin
    Pumpkin pie spice
    Graham cracker crust
    Combine all ingredients and scoop into crust. Viola! Enjoy
    Store in freezer

  68. I am not a big pumpkin fan but I found. a recipe for pumpkin bread in a magazine 45 years ago and I make it from October thru January and sometimes freeze 1 or 2 to have in February and March. Plan on trying some of these recipes you have listed - thanks so much

  73. I don[t care for pumpkin spice. I think it's the clove. A smiggin of clove is ok, but as soon as I can recognize it's taste, it's too much.
    We had someone at our wedding who made a video of it. Mind you, this was MANY years ago (50+) and it was a soundless video. She invited us over to show us the film and served her "special" lasgana. When she asked if we could guess what her secret ingredient was, we quickly said "cloves". She was surprised we could tell!

  75. I wouldn't qualify my offering as a recipe but just a pumpkin tip. I take a little container and mix sugar and pumpkin pie spice together for use in my coffee. There's something about mixing the two and allowing it to sit in a closed container that seems to make the flavor more effective with the coffee than just using sugar and sprinkling with spices after. I prefer this to flavored creamers.

  91. I have a favorite pumpkin memory - a few years ago, my sons had mentioned that they were getting too old for Halloween, nothing scares them anymore, it is always the same thing. I couldn't argue, as many people feel that way as they grow up. But, being that I love Halloween still, I didn't want them to pass up any Halloween opportunities. So, I asked, for one last Halloween event, if they would carve pumpkins with me. They agreed, so we went outside to the picnic table with all the supplies. I had an extremely large pumpkin ready to take the guts out. I used two hands and grabbed a big, plump, gooey mess, and threw it directly at my son. He gasped, looked at me, smiled, grabbed a handful of goo and threw it back at me. It was war afterwards - we ended up with the messiest pumpkin carving event in history and we all had to take turns with the hose because we were all covered in pumpkin guts. It was a Halloween they haven't forgotten. Now we all hang out on Halloween together - pizza and treats, and a whole lot of fun.
