ELLEN BYRON: When it comes to choosing recipes from my personal vintage cookbook collection to update for inclusion my Vintage Cookbook Mysteries, I’ve learned that sometimes the easiest recipes are the best. Case in point, this artichoke omelet recipe from a 1950s cookbook, which you’ll find in my latest book, A Murderer’s Guide to Mardi Gras, Vintage Cookbook Mystery #5.
Artichoke Omelet
INGREDIENTS
- 1 T. vegetable oil
- 1 T. butter
- 1 garlic clove, minced
- 1/4 onion, minced
- 1 tsp. parsley, minced
- 3 artichoke hearts, cooked and chopped
- 3 eggs
- ¼ tsp. salt
- 1/8 tsp. pepper
INSTRUCTIONS
Combine the vegetable oil and butter in a heavy skillet.
Once the butter has melted, add the garlic, onion, and parsley. Sauté until tender.
Add the artichoke hearts and cook until
well-heated.
Beat the eggs slightly, adding the salt and pepper.
Pour into the skillet with the other ingredients and cook until the
eggs are done. Don’t worry if you can’t quite make an omelet. This dish taste
perfectly delicious as scrambled eggs!
Serve at once.
Servings: 2 —or one if you’re really
hungry!

That sounds yummy, and congratulations on your double release! I usually stick with cheddar cheese in my omelet, but I've been known to add diced cooked potatoes and/or ham, too.

ReplyDeleteKim, thanks so much! And I think a white cheese like mozzarella or provolone would be a good choice. The artichoke hearts have a delicate flavor and I think these cheeses would compliment rther than overwhelm it.

DeleteI love artichokes in almost anything, so this looks almost perfect to me. I would probably add a bit of cheese, because, well, cheese! ReplyDeleteMy favorite omelettes are the French variety--silky soft and slightly undercooked. With sautéed mushrooms, melty cheese, and a sprinkling of chopped herbs. Delicious!

Good question! Mine are plain - I use TJ's canned artichokes and squeeze out as much water as I can - but I think marinated would be delicious.

ReplyDeleteWelcome, Ellen! I'm a big fan of your books. I really loved the Plantation series and love visiting NLOA and the plantations there. I don't like eggs so I can't answer your question about omelets. The only omelet I like is a hashbrown omelet with bacon and onions, but without the eggs. I can get it at a restaurant in Holland MI and it is delicious.

~~ Works out well - I ended up in hospital Cardiac Care for a spell with IV in both arms so couldn't read with hands 😱Who could have Ever Thought that could happen. I Read Everyday. It made Beloved read to me after sending him home for Kindle. He finally learned who who are as opposed to me saying how Fabulous all you Series Are
Since his Cancer Surgery gave him early retirement he learned to Cook He has Taken Over My Kitchen ❤️ He really has become a Top Chef With Amazing meals
