VMBURNS: I've been busy testing recipes for my Baker Street Mystery book, ICING ON THE MURDER, which releases on July 29th. My editor told me the book would be released in the fall, so I went for fall recipes. Fall for me includes apples. So, I included lots of apple recipes (thanks to several friends) who donated recipes and agreed to help taste test. I found myself with leftover apples and a desire for a quick bread and stumbled across a recipe for Apple Fritter Loaf Bread. This recipe didn't make it into the book, but its definitely a keeper.
APPLE FRITTER LOAF BREAD
INGREDIENTS
- 2-3 medium apples, peeled and chopped
- 1 Cup flour
- 1/2 Cup brown sugar
- 2 Teaspoons ground cinnamon
- 1 Large egg
- 1/3 Cup granulated sugar
- 1/4 Cup vegetable oil
- 1/4 Cup sour cream
- 2 Teaspoons pure vanilla extract
- 1 Teaspoon baking powder
- 1/2 Teaspoon salt
- GLAZE
- 1 Cup powdered sugar,
- 1 Teaspoon pure vanilla extract
- 3 Tablespoons milk
- INSTRUCTIONS
- Preheat your oven to 350 degrees F and spray your loaf pan with nonstick cooking spray.
- Mix the chopped apples, brown sugar, and cinnamon in a bowl, and set aside.
- Whisk the wet ingredients including the egg, vegetable oil, sour cream, and vanilla with the granulated sugar.
- Mix the dry ingredients in a separate bowl including the flour, baking powder, and salt.
- Add the dry ingredients into the bowl with the wet ingredients. Mix until ALMOST completely mixed together.
- Fold 1/2 of the apples into the batter and pour into your prepared loaf pan.
- Top the batter with the remaining apples and bake for 55 minutes.
- Make the glaze while the cake cools.
- Whisk the powdered sugar, vanilla, and milk together until smooth. If your glaze is too thick, add a little more milk. If it's too thin, add a bit more powdered sugar.
- Remove the apple loaf when it's cooled.
- Pour the glaze over the loaf when the loaf is completely cooled.

DeleteCongrats on your book! I have always loved apple fritters! This loaf bread looks delicious, especially with the glaze. It would be something good to serve on a holiday morning, like Thanksgiving or Christmas.

Lois, thank you so much. It was surprisingly easy to make, and I think the next time I make it, I might try a different variety of apples. I'm partial to Honey Crisp, but I used Galas for this.

DeleteDang, I found this recipe two weeks late. I had two apple in the fridge I wanted to use up and put together a French apple cake, bread kinda thing in my bread maker. This would have been much better. Thanks for the recipe.
